Vegan Roast - Woodland Roly Poly Pie

Time From Cupboard to Plate: 60 minutes
Serves: Four Portions

Ingredients:

Pastry:
Plain Flour, 3 cups
Olive Oil, 4 tablespoons
Salt, pinch
Mustard, 1 teaspoon
Water, to mix

Filling:
Dried Mushrooms, 1 cup
Fresh Mushrooms, 4 medium
Onion, 1 large
Red Pepper, 1 large
Peanut butter, 1 tablespoon
Olive Oil, 1 tablespoon
Stock cube, 1
Boiling Water, 240ml
Pine Nuts, 1 handful
Garlic, 2 cloves

Recipe:

Pour boiling water over the dried mushrooms and leave them to soak. When ready, strain and rinse.

Pastry: Mix the flour, mustard, salt and olive oil in a bowl. Add water slowly, a bit at a time mixing in until you have a firm dough. Leave to one side.

Filling: Chop the onion and fry in a little oil until soft, add diced pepper, chopped garlic and then sliced fresh mushrooms. Make up the stock with 240ml of boiling water and add in tablespoon of peanut butter, mix together and then add to the rest of the filling along with the re-hydrated dried mushrooms. Keep filling on a medium heat to reduce sauce down. Once it is a nice thick sauce like consistency, remove from the heat and leave to cool a little.

Lightly grease a baking tray.

On floured, flat worktop roll out the pastry dough into a rough rectangle shape about 6mm thick. Spoon the filling out evenly across the pastry leaving a good 3 cm boarder around the edge with the mixture about 1cm deep. Be careful not to overfill the pastry, left over filling can be frozen or made up into other pies. Sprinkle the pine nuts evenly across the mixture.

Fold in the boarders on all four sides onto the mixture. Fold it again along just the far long edge and then carefully continue to roll it up as you would a Swiss roll cake. This is where if you have overfilled it the filling will come spilling out so take evasive action and scoop some out if that starts to happen. If the pastry is too thin or the mixture too hot it can split the dough.

Carefully transfer the roly poly from the worktop to the greased baking tray and cook in the oven at 1900C for about 30 minutes, until the pastry is golden.

Serving:

Slice the roly poly into portions and serve with your favourite green vegetables. Families beware that the two end sections rapidly become the most desired slices and arguments can ensue without careful management!
