Coconut Cream Pound Cake Recipe

Ingredients

225 g softened butter
224 g softened cream cheese
600 g white sugar
Half a dozen eggs
5 ml coconut extract
375 g all-purpose flour
2 g baking powder
150 g coconut flakes
Baking Instructions

Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch tube pan.

Cream the butter and cream cheese until thoroughly blended. Add sugar and whisk to light fluffy texture. Add 1 egg at a time and whisk followed by coconut extract. Pour flour and baking powder in until lightly moistened, then the coconut. Mix is ready for the baking pan.

Bake for 1 hour and 20 minutes. Allow to cool for 10 minutes before moving.

Another cake simple to make and goes down well with wedding guest and their gullets to is the (Easy Light Fruitcake.)

Ingredients
455 g candied cherries, halved
5 candied pineapple rings, finely minced
870 g golden raisins
360 g candied mixed fruit peel
170 g almonds
125 g all-purpose flour
455 g softened butter or margarine
400 g white sugar
Half a dozen eggs
5 ml vanilla extract
60 ml orange juice
625 g all-purpose flour
9 g baking powder
3 g salt
6 split almonds
Baking Instructions

1. Preheat oven to 275 degrees F (135 degrees C). Line the bottom and sides of two greased 9 x 5 x 3 inch loaf pans, and 1 round 4 1/2 inch x 3 inch deep pan with brown paper. Grease the paper.

2. Mix cherries, minced pineapple pieces, raisins, mixed peel, 1 cup pecans, and 1 cup flour in a basin. Blend all ingredients until fully coated with flour and stand to aside

3. Using a separate bowl, cream the butter/margarine and sugar. Whisk in 1 egg at a time. Add orange juice and vanilla and stir. Take 5 cups flour, your baking powder and salt and add to creamy mixture. Add floured fruit and nuts. Carefully pour mix into baking pans. Fill each pan 3/4 full. Add split almonds over the top.

4. Usual baking time 3 hours. Pierce cake with a toothpick and if done the toothpick comes out clean. If the top of your cake darkens before the sides cover with foil.

My suggestion: plain sponge. Nearly every cake base is sponge mix. If a person says they don't like a particular cake, it means they're not fond of certain ingredients used to fancy up and flavor. Keeping it plain allowing your guest to choose their own fillings, is the key. Fill glass bowls with a variety of flavored fillings (chocolate sauce, custard, jelly, and butter cream, raisins, mixed fruit, syrup, treacle and different flavored jams and fruit sauces? Do this and your guests won't have to wait for you to turn your back before spitting out cake chosen by you.

Victoria Sandwich Cake, Madeleine, Banana Cake, and Dropped Scones Recipes

Victoria Sandwich Cake Recipe

Ingredients:-
4 oz. flour
½ teaspoon baking powder
1 teaspoon vanilla
½ tablespoon raspberry jam
4 oz. margarine or butter
4 oz. castor sugar
2 large eggs or 3 small eggs

Methods:-
1. Line and grease two 7" sandwich tins.
2. Cream the fat and sugar till light and fluffy.
3. Beat up the eggs one at a time and add it gradually to the creamed mixture, beating it well in.
4. Beat in the vanilla.
5. Fold in the flour sieved with baking powder.
6. Turn the mixture into the prepared tins and spread it out evenly hollowing it slightly in the center.
7. Bake it in a moderately hot oven, at 375°F for about 25 minutes.
8. Turn the cakes out to cool on a wire tray.
9. When cooled, spread raspberry jam on each and sandwich them together.
10. Sprinkle the top with castor sugar and serve it on a doily.

Madeleine Recipe

Ingredients:-
3 oz. flour
¼ teaspoon baking powder
½ teaspoon vanilla
2 to 3 tablespoons desiccated coconut
2 oz. margarine or butter
2 oz. castor sugar
1 big egg
1 tablespoon raspberry jam
4 glace cherries

Methods:-
1. Grease 7 dariole moulds
2. Cream the fat and sugar and add the beaten eggs gradually to it.
3. Beat in the vanilla and fold in the flour which has been sieved with the baking powder.
4. Put equal amounts of the mixture into the greased mould and bake them in a hot oven at 400°F for about 20 to 25 minutes.
5. Turn them out to cool.
6. Warm the jam by standing it in hot water to melt it.
7. Brush the cakes with melted jam and roll them in desiccated coconut.
8. Stand each cake in a paper cup and decorate each with ½ a cherry on top.

Banana Cake Recipe
Ingredients:-
4 oz. flour
½ teaspoon baking powder
½ teaspoon bicarbonate of soda
1 tablespoon milk
1 teaspoon lime juice
3 oz. margarine or butter
3 oz. castor sugar
1 big egg
3 to 4 ripe bananas

Methods:-
1. Line a 6" round cake tin or grease and flour an 8" ring mould.
2. Cream the fat and sugar and add the beaten egg gradually and beat well.
3. Mash the bananas with a fork to get ½ cup mashed bananas.
4. Add the lime juice to the milk. Then add the milk and mashed bananas to the creamed mixture and mix well.
5. Fold in the flour which has been sieved with the baking powder and bicarbonate of soda.
6. Turn the mixture into the prepared tin and bake it in a moderately hot oven at 375°F for about 1 hour.
7. Coll the cake on a wire tray and serve it on doily.

Dropped Scones Recipe

Ingredients:-
4 oz. flour
½ teaspoon cream of tartar
¼ teaspoon bicarbonate of soda
1 egg
1 oz. margarine
1 oz. castor sugar
¼ pint milk (sour if possible)

Methods:-
1. Sieve the flour, cream of tartar and bicarbonate of soda together into a bowl.
2. Rub in the margarine and add the sugar. Mix well.
3. Make a well in the flour and add in the egg and the sour milk.
4. Mix quickly into a thick batter. Do not beat the batter.
5. Heat up a greased frying pan or the grill plate of an electric oven.
6. Drop a tablespoon of the mixture at a time on the hot pan and let it cook till bubbles rise and burst.
7. Turn over to cook and brown the other side.
8. When cooked, put the dropped scones between a clean folded towel to keep them moist and warm.
9. Serve hot dropped scones with butter and jam served immediately.

Note:- A batter for dropped scones should be slightly lumpy and not smooth. After greasing the pan the first time, it is not necessary to grease it again. An over greased pan will not give the dropped scones a smooth and evenly browned surface.

Hawaiian Coconut Haupia

Haupia is a Hawaiian jello-like dessert made of coconut. Real easy to make and real good to eat. Enjoy! Ingredients: 6 tbsp granulated sugar 6 tsps corn starch 1 1/2 cups milk 1 1/2 cups coconut milk Mix all ingredients together. (In the video I blend them in a blender but later found it was not necessary to do so. Simply mixing all the ingredients with a wisk is sufficient.) Pour mixture into a medium size pot. Place on high until it starts to bubble or till steams then reduce to medium or medium high. Continue to stir until mixture thickens. Place in cake pan or whatever dish you desire. Cool in refrigerator for at least an hour or until you get hungry. haha

Health Benefits of Coconut Cream

Isn't coconut cream the culprit that causes weight gain and triggers heart disease? In fact, the health benefits of coconut cream are more than what you've heard and learned for the past decades. So how does this wrongly-accused cream promote health?

Looking For an Italian Wedding Cake?

There are two things every Italian loves, family and good food.

This was an order for a little girls birthday. She's turning 7 and she love love loooooves Hello Kitty. I delivered the cake and cupcakes to her the night before the party (which is being held today - Saturday June 12th) and she was so surprised and love it! Her Mum even asked me to be in a photo with her little girl and the cake. Both the cake, and the cupcakes were vanilla cake. The figurine was made by hand out of fondant, not gum-paste, I made it the night before I delivered it and it dried nicely. The battery on my digital camera died right at the end! ha ha lucky!

Cupcakes - 3 Delicious Cupcake Recipes

There are many variations on the classic cupcake recipe and countless additional ingredients and flavourings that can be added to make cupcakes interesting. Fruit is always popular, whether dried or fresh, as well as nuts, coconut, ginger and grated carrots. Chocolate of course is an all time favourite. In fact the range of different combination's is almost limitless. Below are three delicious cupcake recipes for those people looking for something different. They would be ideal served up for afternoon tea.

White Chocolate and Raspberry Cupcakes

125g (4 oz) butter, coarsely chopped
80g (2 1/2 oz) white eating chocolate, chopped coarsely
1 cup caster sugar
1/2 cup milk
1/2 cup plain flour
1/2 cup self raising flour
1 beaten egg
100g (3 1/2 oz) frozen raspberries

Preheat oven to 170oC (325oF). Line a 12 hole muffin pan with paper cases. Stir butter, chocolate, sugar and milk in small saucepan over low heat until smooth. Transfer mixture to a medium bowl and allow to cool, about 15 minutes. Whisk sifted flours into chocolate mixture. Add egg then fold in raspberries. Divide cake mixture among patty cases and bake for about 30 minutes or until cooked. Allow to cool in pan for 5 minutes before turning out onto a wire rack to cool.

Ice with white chocolate ganache. To make ganache bring 1/2 cup cream to the boil in a small saucepan then remove from heat. When bubbles subside add 360g (11 1/2 oz) coarsely chopped white eating chocolate. Stir until smooth. Spread on cooled cake.

Banana Cupcakes with Passion Fruit Icing

125g (4 oz) butter at room temperature, chopped
3/4 cup firmly packed brown sugar
2 eggs
2 cups self raising flour
1 teaspoon mixed spice
1 cup mashed banana (about 3 bananas)
3/4 cup sour cream
1 tablespoon milk

Preheat oven to 170oC (325oF). Line two 12 hole muffin pans with paper cases. In a large bowl, using an electric beater, cream butter and sugar together until light and fluffy. Add eggs one at a time, beating well after each addition. Sift flour and spice together. Fold into creamed mixture with banana, sour cream and milk. Spoon mixture into paper cases until two thirds full. Bake for 25 minutes or until cakes are cooked when tested. Cool in tin for 5 minutes then transfer to a wire rack. When cool ice with passion fruit icing.

Passion fruit icing

In a medium heatproof bowl combine 1 1/2 cups icing sugar, 1 teaspoon soft butter and 2 tablespoons passion fruit pulp. Place over a pan of simmering water and stir until smooth and spreadable. Spread over cooled cakes.

Carrot and Orange Cupcakes with Mascarpone Frosting

8 tablespoons softened butter
1/2 cup firmly packed brown sugar
Juice and finely grated rind of 1 orange
2 eggs, lightly beaten
175g (6 oz) grated carrots
1/4 cup coarsely chopped walnut pieces
1 cup plain flour
1 tsp ground pumpkin pie spice
1 1/2 teaspoon baking powder

Preheat oven to 180oC (350oF). Line a 12 hole muffin pan with muffin paper cases. Beat together the butter, sugar and orange rind until light and fluffy. Gradually add the eggs, beating well after each addition. Squeeze any excess liquid from the carrots and add to the mixture with the walnuts and orange juice until combined. Fold in the sifted flour and pumpkin pie spice. Spoon mixture into paper cases until 2/3 full. Bake for 25 minutes or until cooked. Transfer to a wire rack and allow to cool. Ice with mascarpone frosting.

To make mascarpone frosting put 1 1/4 cups mascarpone cheese, 4 tablespoons icing sugar and grated rind of 1 orange in a large bowl and beat together until smooth and creamy. When cupcakes are cooled spread frosting on each cake. Store in refrigerator until ready to serve.

These cupcake recipes will make you a winner with your family and friends.

Johnny Cakes

Belizean food is easy to prepare, physically filling and delightfully delicious.  How about a dish of Johnny Cakes - a cross between what the American people traditionally or culturally know as biscuits and/or pancakes and traditionally a favored  food item breakfast dish in Belize.    However, Johnny Cakes are also, for many people, a standard, even a favorite bread that is consumed during lunch and dinner meals.  They are excellent with refried beans, cheese that is melted, crumbled or sliced.   A cultural Belizean food indeed; seldom is a meal eaten in a Belizean home without Johnny Cakes!

JOHNNY CAKES

2 lbs. Flour 1/4 lb. Shortening 4 tsp. Baking powder 2 tsp. Salt Cream from 1 coconut, or 1 tin Coconut Cream (8 oz.)

Method: Place flour in mixing bowl and add all dry ingredients. Work in shortening with fingers. Gradually add coconut cream and mix until dough handle easily without being too sticky, or dry. If too sticky, add a bit more flour. Knead until smooth. Cut into desired size (golf ball size works well) and shape into a ball. Let rest about 10 minutes, then flatten to about 1/2" thickness onto baking sheet. Prick top with fork four or five times.

Bake in preheated oven at 450 degrees F. until golden brown, or about 15 minutes. Once cooked split open and butter while hot.

Johnny Cakes are also good for when one has the munchies, pop one in the microwave or eat it cold, like bread and butter spread a bit of jam, jelly or your favorite fruit preserve on top. How delicious!

We made hamburger cupcake for Bailey's birthday. The "buns" and the "meat" was white cake and Devil's food cake; the "mustard" and the "ketchup" was buttercream frosting and the "lettuce" was coconut with green food coloring.

The Basics of Cooking Polynesian Dishes With Coconut

If you visit Hawaii, or indeed any Polynesian island, you are sure to notice that coconut finds its way into many dishes. In fact, coconut composes up to half of the typical diet in some areas of Polynesia. This fruit grows on the ubiquitous palm tree, which can be spotted on nearly every island in this area of the world. It is grown both for decoration and for its many delicious uses in both sweet and savory dishes. If you're planning a luau party or simply love the delicious flavors of Hawaii, start cooking with fresh coconut.

Nearly every part of the coconut fruit has some culinary use. The white fleshy part, or meat, is used in a wide range of traditional Polynesian dishes. The coconut water, found in the central cavity of the coconut, is a highly nutritious and refreshing drink. When grated coconut meat is processed with water or milk, the result is coconut milk or coconut cream. This can be further processed into coconut oil. The oil of the coconut is frequently used for cooking (especially frying at high temperatures), making margarine, and even in beauty products.

Coconut can be found in a wide variety of dishes originating from Polynesia. For example, grated coconut can be added to soups or stews, or sprinkled on top of cakes and other desserts. Coconut cream can be used as a thickener, though its most well-known use is in the pina colada, a tropical drink made with rum and pineapple.

In Tahiti, one of the most popular dishes is Poisson Cru, a mixture of raw fish marinated in lime juice and coconut milk. Another popular meat dish using coconut is Papaya Chicken, a mixture of coconut milk, papaya, and chicken. Mahi, a flaky white fish, is one of the most popular seafood dishes in Hawaii, and it is used in numerous recipes using coconut milk. For dessert, try Faraoa coco (coconut bread) or Poe, a taro root pudding flavored with banana, vanilla, or papaya and topped with coconut milk.

If you want to start using fresh coconut in your cooking, you might be unsure where to begin, as it's not found in many American dishes. The thick outer shell makes coconuts somewhat tricky to open. While monkeys open them by throwing them at rocks, the best way is to use an ice pick or screwdriver to pierce the eyes, which allows you to drain the liquid. Then, cook the coconut in the oven for about twenty minutes, followed by wrapping it in a towel and hitting it with a hammer to get it to open.

If your Polynesian recipe calls for grated coconut, one coconut produces between three and four cups of grated flesh, which can be stored in the refrigerator for a few days before use. If it's coconut milk you're after, mix a cups of loosely packed, grated coconut with a cup and a half of water from the coconut, found in the central cavity. Then heat it and strain it to produce coconut milk for your recipe. This process can also be done with a blender. The finished coconut milk can be used in a variety of both sweet and savory dishes at your next tiki party.

Quick Christmas Cookie Recipes - Lemon Snowflake Cookies

A deliciously light and flavorful cookie.

1 (18 1/4 oz.) pkg. lemon pudding cake mix

2 1/4 cups frozen whipped topping, thawed

1 egg

Confectioners' sugar

Directions

Preheat oven to 350 degrees.

In a bowl, combine cake mix, whipped topping and egg. Beat with mixer on medium speed until well blended. Batter will be very sticky.

Drop by teaspoonfuls into confectioners' sugar and roll lightly to completely coat.

Place cookies onto ungreased baking sheets. Bake for 10 to12 minutes or until lightly browned. Remove from pan and let cool.

Makes 60 to 72 cookies.

Shape into 1-inch balls. Roll balls into confectioners' sugar. Store cookies in an airtight container and keep in the refrigerator.

Before serving, roll the cookies into confectioners' sugar again, if desired.

Makes 66 cookies.

In a bowl, combine the cake mix, egg and the whipped topping; mix until well combined.

Drop dough by tablespoonfuls into sugar; roll until coated completely.

Place cookie balls onto prepared baking sheets. Bake for 10 to 12 minutes or until lightly browned around the edges. Let cool.

Makes 60 cookies.

1/2 cup butter

1/2 cup milk

Directions

In a large saucepan, heat the butter, milk and sugar; bring to a boil, stirring occasionally. Boil for 1 minute. Remove from heat.

Stir in the oats, cocoa and raisins, nuts or coconut. Drop by the tablespoonful onto waxed paper. Cool.

Makes 36 cookies.

A Taste of Jamaican Food and Recipes

The flavors of Jamaica are the product of the island's history combined with a verdant, lush climate. The Spanish, British, African and East Indian have all had an influence over what is today a unique island cuisine made colorful by the many tropical fruits that thrive here.

The waters off Jamaica have always teemed with fish and seafood is the primary protein source for islanders. Snapper, grouper, sea bass and other reef a deep sea fish are caught daily by the many fishermen whose boats line the beaches. Spiny lobster, shrimp and freshwater crustaceans are readily available and cooked usually in a thick sauce. Chicken and goats are well suited to the small mountainous island and are kept by many families but cattle are rare and beef is not the predominant meat.

Many of Jamaica's fruits, including pineapple, mango, banana and avocado were brought to the region by slave traders and plantation owners experimenting with crops. What were once sugar cane fields are now being used to grow fruits and ackee for export and domestic use.

Few other cuisines mix such a range of spices and tastes - sweet, hot and savory - as Jamaican cooking. Jamaican food wouldn't be the same without the spices, seasonings and colors from: Allspice, the pimento berry.

Among many of the spices grown in Jamaica are nutmeg, ginger, thyme, scotch bonnet peppers, which are integral distinct flavors of Jamaican cooking. The pungent thyme grows rampantly on the island and is found in the majority of Jamaican foods.

Favourite Jamaican foods are those for coconut cake, rum punch & beef jerky recipies.

Real Jamaican food, when cooked with feeling, is a soul-satisfying experience.

Unlock the Coconut - Miami Coconut Milk Recipe

At the market, choose a coconut that sloshes when you shake it; if you don't hear anything, it may be dried out. To open the coconut, pierce three dark-colored eyes at the top of the nut with a screwdriver or an ice pick. Pour out the liquid inside; reserve to serve as a beverage, if desired. Place the drained coconut on a rimmed baking sheet in a 350*F oven for about 15 minutes, or just until the shell begins to crack. Let cool briefly, then place on a study surface. Using a hammer or mallet, hit hard along the crack; the coconut should then break into pieces.

Pry white coconut flesh from shell with a screwdriver or knife with a rounded end. Pare off brown skin with a small knife or vegetable peeler. You may grate the coconut to use in fruit salads, baked gods, or confections, or as a condiment to serve with curries. You can also cube it to make fresh coconut milk, often called for in Asian and tropical dishes. The following recipe will help you do just that.

Miami Coconut Milk

cut fresh coconut into 1/2-inch chunks

for each cup of coconut chunks, measure 1 cup hot water

1. Whirl together in a blender or food processor until mixture is thick and pulpy (about 20 to 30 seconds).

2. Let steep for 30 minutes.

3. Strain through a double thickness of cheesecloth, squeezing out liquid; discard coconut.

4. Cover and refrigerate "milk" for up to 3 days; or freeze for longer storage.

5. One cup each coconut and hot water makes about 1 cup coconut milk
