Cake Balls - The New Dessert Star

Ever been to a party with people walking around with huge smiles on their faces holding little treats in their hands? These are cake balls and they are the new dessert star.

Made with scraps of cake, a binding and chocolate or confectionary coating, they are simple to make and assemble. Crumble the cake into a bowl, and add some liquid to bind it together. Not sure how much? Add a little at a time until it has the consistency of cookie dough. Frosting, liquid coffee creamers, ganache, caramel, fruit preserves, and liqueurs are all good to use in your cake balls. Be as adventurous as you like but be careful adding the liqueur flavors. A little goes a long way. Use a cookie scoop or melon baller to make your cake balls. Then place them on a parchment lined cookie sheet pan, and chill for 5-10 minutes in the refrigerator.

Empty a new bag of candy melts into the top of a double boiler or microwave save bowl and melt till smooth according to the directions on the bag. Remove 10 cakes balls from the refrigerator. You don't want them coming back to complete room temperature before they are dipped in chocolate. Use a craft stick dipped partially in the chocolate to press into each cake ball. This will help keep your cake balls from sliding off into your melted chocolate.

Dip the ball down completely into the melted chocolate and remove. You may have more success if you dipped the cake balls at an angle. Turn the cake ball over to remove the excess chocolate. Some people tap the cake ball up against the edge of the bowl to remove the excess. Experiment to see what works best for you.

Use another parchment lined cookie tray, line up your chocolate-covered balls. Keep repeating with the rest until you are finished. If you like, you can drizzle a different color across the top, dip them in nuts or coconut or add decorations at this time. Once you're done, put them back in the refrigerator.

They can be put into cellaphane bags with pretty bows and tags and lined up on trays for special events.

Peanut butter - chocolate, peanut butter frosting
Carrot - carrot, cream cheese frosting
Chocolate - chocolate cake, chocolate ganache, chocolate frosting
Banana - banana cake, cream cheese frosting
Lemon - lemon cake, lemon filling or curd, buttercream frosting
Brownie/Chocolate - brownies, chocolate cake, chocolate frosting
Pineapple - pineapple cake, cream cheese frosting with a little rum extract added
b>Pumpkin - pumpkin cake or bread, cream cheese frosting
White Cake - white cake, raspberry preserves or filling, cream cheese frosting
Creme Brulee - butter cake, caramel, butterscotch frosting
Chocolate Hazelnut - chocolate cake, hazelnut coffee creamer (liquid), chocolate frosting
Spice - spice cake, butterscotch frosting
Chocolate/Eggnog - chocolate cake, eggnog

Silent Angel Coconut Cream Pie

I like to use a graham cracker crust though you might wish to use a traditional pie crust. I generally use the entire graham cracker crust box of crushed graham crackers. The box will tell you that it makes enough crust for 3 - 9" pies. I use nearly the entire mix and make 2 - 10" pies with only a little bit left over for the birds. Follow the directions on the box for the crust, mixing the sugar and the melted butter according to their specifications. I tend to use a little less sugar. Put the pie crusts in the freezer to harden a bit while you make the filling.

Before you make the filling, spread 1 1/2 cups of sweetened flaked coconut on a cookie sheet and place it under the broiler to brown. Watch this very carefully. It browns very fast and will burn just as fast. You want to err on the side of caution here and leave some untoasted if it is necessary to pull it out before those flakes that are brown turn to crispy black.

For the filling, I use two large boxes of vanilla pudding and pie filling. This is important for taste. Jello makes a coconut cream pudding mix that doesn't give the coconut cream pie the same taste that you are looking for so stick to the vanilla pudding mix. Also, don't use the instant variety; use the cooked pudding only. There is a great difference in consistency between the two. Make the pudding according to packages directions cooking it with the required milk. Once the pudding has begun to thicken add two cups of sweetened flaked coconut and mix well. Take the pie crusts out of the freezer and pour in the filling.

Put the pies in the refrigerator to stay cool while you prepare the whipped cream. Use 1 quart of heavy whipping cream (even better if you can find the "extra" heavy whipping cream). Whip the cream using an electric egg beater. As the whipping cream begins to thicken, add 3/4 of a cup of powdered sugar and two teaspoons of vanilla extract. Whip until the cream is stiff and makes peaks as you pull the beaters out of the bowl. Remove the pies from the refrigerator and top with the whipping cream. Spread the toasted coconut out on top of the whipping cream peaks. Place the two pies in the refrigerator at least six hours (preferably overnight) to set.

Eat, enjoy and drool. Making two pies gives you extra pieces for breakfast the next day! This pie makes even the angels sigh in silence!

Delicious Bar Cookies - Triple Layer Chocolate Bars and Cranberry Coconut Bars

For quick-fix tempting desserts, try bar dessert/cookies. They are easy, tasty, and they are easy to transport to pitch-in meals, office parties, family reunions, etc. The Triple Layer Chocolate Bars are perfect for the chocoholic in your group. The Cranberry-Coconut Bars are a perfect blend of tart and sweet combining cranberries, coconut, and white baking chips.

TRIPLE LAYER CHOCOLATE BARS

1 1/2 cups graham cracker crumbs
1/2 cup cocoa, divided
1/4 cup sugar
1/2 cup butter
1 can (14 oz) sweetened condensed milk
1/4 cup all-purpose flour
1 egg
1 tsp vanilla extract
1/2 tsp baking powder
3/4 cup chopped nuts
2 cups (12 oz pkg) semi-sweet chocolate chips

Preheat oven to 350 degrees.

In a medium bowl, stir graham cracker crumbs, 1/4 cup of the cocoa and the sugar together. Stir butter into mixture, blending well. Press mixture firmly onto bottom of ungreased 13 x 9 x 2-inch baking pan.

In a small bowl, beat sweetened condensed milk, flour, egg, vanilla, baking powder and the remaining cocoa. Stir nuts into the mixture. Spread evenly over prepared crust. Sprinkle with chocolate chips. Bake in 350 degree oven for 25 minutes or until set. Cool completely in the pan on a wire rack. Cut into 24 or 36 bars depending on the size you want. Store in a tightly covered container at room temperature.

CRANBERRY COCONUT BARS

2 cups all-purpose flour
1 tsp baking soda
1 cup butter
3/4 cup brown sugar
3/4 cup granulated sugar
2 eggs
1 tbsp vanilla extract
1 cup quick oats
1 pkg (12-oz) white baking chips, divided
1 cup shredded coconut
1 1/2 cups dried cranberries
1/3 cup milk

Preheat oven to 350 degrees. Lightly grease or spray a 15 x 10-inch jelly roll pan; set aside.

In a small bowl, combine flour and baking soda; set aside. Cream together the butter, brown sugar and granulated sugar; add eggs and vanilla. Add the flour mixture to the creamed mixture gradually. Blend in oats, 1 cup of the white baking chips, coconut and cranberries. Press dough evenly into the prepared jelly roll pan. Bake at 350 degrees for 20 minutes or until edges are golden brown and center is set. Cool completely.

In a small saucepan, cook and stir remaining baking chips and milk over low heat until smooth. Drizzle mixture over cooled bars. Sprinkle with chopped pecans, if desired. Cut into bars to serve.

Best Dessert Recipes - The Best Desserts Are "Just" Desserts

A lovely dinner doesn't feel complete until dessert is served. Desserts should always compliment the menu. Our taste buds focus on sweet, sour and salty. If you prepared a menu that includes sweet and sour, you'll want to offer a less complex dessert. The best desserts for meals of this kind suggest simplicity - pears poached in a plum wine sauce, blood orange slices sauted in pineapple juice and rum or bananas rolled in coconut and pecans and baked in Cointreau sauce.

For meals that are standard meat and potatoes, your menu's theme is a good guide. With roast beef or chicken entrees, the best dessert recipes may be typical rice pudding or apple pie. Try adding coconut to your rice pudding and top them with orange slices sauted in brown sugar. Serve apple pie with a slice of a really great cheddar cheese for ultra-sophisticated simplicity. Or, try glazing it with apricot preserves and then broiling until the top turns slightly bubbly.

Planning main menus ahead very carefully is an opportunity to coordinate food flavors. When serving Italian food, for instance, a great idea is to serve one of the best dessert recipes that's simply delicious - cassata, an Italian cheesecake that's easy to make. Some cassata recipes call for ricotta, a heavier-textured Italian cheese. Try using mascarpone instead of ricotta. You will need a springform pan for this recipe.

Cassata:

16 oz. Mascarpone or Ricotta cheese. (If you are using Ricotta, sieve until smooth.)
4 eggs separated, slightly chilled
1 1/4 cups superfine sugar
1/2 teaspoon freshly grated orange rind
1/2 teaspoon vanilla
1/2 teaspoon almond liqueur
1/2 cup white raisins soaked in Sambucca liqueur, drained (reserve liqueur)
1/4 cup pignoli nuts
1 sponge cake - May be purchased or use standard recipe for sponge cake

Beat eggs yolks until they reach a pale yellow color. Add vanilla and almond liqueur. Blend with beater. Beat egg white until stiff but not dried, adding sugar slowly. Fold egg yolk mixture with cheese and raisins. Add orange rind. Slowly fold in egg whites.

Line bottom and sides of spring form pan with sponge cake. Brush with reserved liqueur. Do not soak. Pour in cheese mixture. Allow to set overnight or at least 6 hours before serving. Sprinkle top with pignoli nuts.

For casual "Saturday Night" menus, the best dessert recipes can also be fun desserts. Try old fashioned ice cream sodas or sundaes your guests can "build" themselves. Don't throw out that leftover morning coffee. Pour it into your blender, add a dash of cocoa powder and for adults, a little Frangelico liqueur, and a scant dash of chili powder....yes...chili powder. Sweeten to taste. Pour into old-fashioned glasses and add a dollop of chocolate ice cream and a spring of mint.

One of the best dessert recipes for groups is also a lot of fun: Chocolate fondue. Instead of the traditional fondue pot, pour your melted chocolate into individual Irish coffee glasses. Place a dinner plate under each glass. Add strawberries, marshmallows, walnuts, and small chunks of pound cake. Serve with a fondue fork. Unique and fun for guests.

Animal or dinosaur shaped chicken nuggets is perfect for the kids at the Safari party. You can also serve up plenty of fruits for the guests; try dipping them in chocolate or make up Chocolate Covered Ants for the Anteaters at the party to nosh on. Trail Mix is a tasty treat for the Safari Hunters in the group. You can also make up Dirt Cupcake for the kids to eat. For this Safari party treat you'll need the following ingredients: 1 box cheap cake mix, plus ingredients on the cake box for making cake, Cupcake liners, chocolate frosting, Chocolate wafers or Oreos, Gummy worms and/or other decorations.

Mix up the cake mix according to directions on the box, set aside. Place cupcake liners in a muffin pan. Fill the cupcake liners each about 3/4 full. Then, bake the cupcakes according to the instructions on the cake box. Remove from oven and let cool. Apply frosting to the cupcakes. Smash up the Oreo cookies or chocolate wafers. Sprinkle on top of the frosting. Carefully arrange one or two gummy worms on top of each of the cupcakes to finish it off.

These Dirt Cupcakes are excellent treats for the guests at your Safari party. Make sure you have plenty of paper goods for the buffet.

New York Style Cheesecake Recipe

New York style cheesecake recipes are made with a combination of cream cheese and Italian cheese cakes made with ricotta cheese. In the early 1920's, this particular silky style of cream cheese was developed in the New York area.

New York style cheesecake recipes were introduced by Jewish delicatessens in New York City. Arnold Reuben Jr., owner of the legendary Turf Restaurant at 49th and Broadway in New York City and a descendant of immigrants from Germany, claimed his family developed the first cream cheese cake recipe. Reuben's cheesecake was so good, it won a Gold Metal at the 1929 World's Fair.

The superior qualities that make Reuben's classic New York style cheesecake are a graham cracker crust, a creamy texture, and distinct lemon flavor that is firm but light in density. Below you will find his Classic New York Style Cheesecake recipe.

Classic New York Cheesecake

Crust:

Heavily coat 10-inch spring form pan with cooking spray

1 1/2 cups commercial graham cracker crumbs

5 Tbsp. butter

1 tsp. honey

1/4 cup sugar

Mix ingredients together with hands until well blended and crumbs appear moist. Pour into pan. With hands, spread evenly across the bottom and pat down firmly.

Filling:

5 8-ounce bars cream cheese, at room temperature

2 Tbsp. flour

1 Tbsp. confectioners' sugar

11/2 cups sugar

grated rind of 1 lemon

1/2 tsp. orange liqueur

3/4 tsp. vanilla

2 egg yolks at room temperature

5 eggs at room temperature

Preheat oven to 400 degrees. Place first five ingredients in large mixing bowl and beat on high until they are completely blended. Add vanilla and 2 yolks, and beat again. Add eggs one at a time, beating well. Pour into prepared pan. Batter will fill pan. Bake for 10 minutes. Top will be golden. Lower oven temperature to 200 degrees and bake for 35 to 45 minutes or until top browns, cake feels bouncy to the touch, and a toothpick tests clean. Cool to room temperature. Serve immediately or cover and refrigerate. Bring to room temperature before serving.

Yield: 16-20 slices

The recipes were brought over by the immigrants.
