Quarterly BBQ Lunch - Pulled Pork - Turkey Breast - Sausage

I do a quarterly lunch at my work. Using a smoker that we pull behind the truck, I'll sleep in my office and cook the meat all night long at about 250 deg F. Started about 11:30 pm and pull the meat off at about 11 am. The beans and sausage go on about 8am. I check the fire about every two hours to make sure it is still going. I use charcoal for the main heat source and then hickory for the smoke flavor. I then pull the pork and cut up the turkey and sausage. Then set everything out. Soul Food Recipes - Top 3 Cakes Eaters Love

Soul food desserts follow the best southern recipes to top off the best meals. The one layer cakes have the reputation as tasty, satisfying and light. I polled a sample of my readers on their favorite cakes. Many were eaters and others were cooks who prided themselves on baking these cakes. Of course those were the one's with the interesting stories and memory.

The memories of family gatherings accompanied by their cake creations filled their thoughts. Most of the cakes that finished at the top of the favorites list were the one layer or the sheet cake variety. But others that received votes but finished lower on the list mentioned the multi-layer cakes. These received fewer votes perhaps because they had more elaborate baking techniques than the 3 that finished at the top of our voters list. For example, the 3 layer chocolate and coconut cakes.

Here's a list of the top 3 soul food cakes voted by readers.

1. Sock-it-to-me Cake - This cake started out as an excellent cake eaten for the holidays. But it has grown in popularity and now many people enjoy it all year. The pecans, cinnamon and nutmeg gives it a tasty and crunchy texture. An excellent coffee cake if you drink coffee. Also an excellent light snack also.

2. 7-Up Cake - This light cake has grown into a popular soul food cake. As the name implies, 7up is added to the cake mix instead of water. This helps to make the cake light and airy. The texture is similar to pound cake. It's shaped and baked in a bunt pan and topped with a glaze or white frosting.

3. Lemon Jell-O Cake - This is another favorite with readers who love the hint of tang plus the lightness of the cake. This sheet cake is topped with a clear lemon glaze that gives it just the right look and taste. People love this cake because it's super simple to make and taste good. It's especially good right out of the oven and topped with glaze.

Cake is an all time favorite when it comes to soul food recipes. These desserts represent celebration and good times to those who consume them. Their simplicity encourages more people to try their hand at baking them and many have. These are beginners cakes. Some creative types even add their own imagination to give the cakes their own unique touch or signature.

You Want to Be Happy? Get Inspired by Little Katie's Story

Little Katie offered to help her mum to prepare a cake for her sixth birthday party. "Well thank you Katie! That's great! We'll make a special chocolate cake this year, with custard and roasted almonds, and coconut flakes..." said mum, wanting to make the event really exciting for Katie.

And so, the preparations for Katie's special cake started.

First, there was the whisking of eggs. Little Katie did it brilliantly but just as she was passing the bowl to her mum the egg mix fell on the kitchen floor. Mum didn't realize until she saw Katie sliding right and left in a puddle of egg mix, giggling and shouting: "Look mummy, I can dance like Justin Timberlake now! Look!"

Mum looking horrified, quickly proceeded to clean up the mess so they could start the cake all over again.

After the sponge base was taken out of the oven and had cooled down, it was time to squirt the custard onto the first layer of the cake. Katie thought she'd spice it all a bit more by emptying the whole jar of strawberry jam onto it too, and flatten it using her hands.

"Look mum, bloooooood! Aaaargh! Are you afraid mum?!"

Mum told her to stop messing and to wash her hands well with soap. "OK" said Katie " but can we keep the jam in my cake please mum? I like jam...Three hours later, the kitchen looked like a battle site and Katie's chocolate cake was almost finished.

Mum had melted dark chocolate buttons and had covered the cake fully with the melted chocolate, and the coconut flakes were ready to be sprinkled onto the top. Katie was busy licking the remaining melted chocolate straight from the bowl. Her red lips and rosy cheeks were covered in dark brown chocolate and her new pink t-shirt was now a little abstract work of art.

"Katie! What are you doing? Don't you want to wait until we finish your special cake?" to which Katie, wearing the biggest smile on her little cute face, replied: "No mummy, thank you, I'm happy now".

Just thinking of little Katie puts a smile on my face...

Kids can often teach us adults valuable lessons. And no one knows how to be happy the way kids do. Playfully, even nonchalantly, fully immersing yourself in the moment, with no other expectations but to just be there and enjoy whatever it is you are doing to the maximum.

Being happy " just because" is something we, as adults, tend to forget along the way. When you allow yourself to remember all the simple, "silly" things you used to do when you were a kid that made you so happy so easily, you can realize that you can choose to be happy right now too. Just think of something that puts a smile on your face and notice how much happier you feel!

Mediterranean Grilled Lamb, Feta Cheese and Kalamata Olive Salad

Because the Mediterranean contains many cultures in close proximity, national cuisines have influenced each other over the centuries. In common they share a love for healthy colorful ingredients, a wide use of seafood, grilled lamb, cheeses, olive oil, olives, and flavorful breads.

The Mediterranean diet is healthy, and equally as beneficial for well-being is the custom of long family meals taken together and enjoyed with good wine.

Traditionally, lamb has been served at Easter, Passover, and in general in spring in many cultures around the world. This grilled lamb salad is a substantial meal in itself. An easy to prepare light desert, and suggested wine pairing follows:

Ingredients:

1 lb. cubed lamb sirloin
9 T. good quality olive oil
2 cloves garlic, minced
1 T. dried oregano
1 T. dried basil
Salt and pepper to taste

4 cups baby spinach
1 cup crumbled feta cheese
1 small basket ripe cherry tomatoes
1 cucumber, peeled, seeded and sliced
2 T capers
1 cup pitted Kalamata olives
2 T red wine vinegar
2 T finely chopped mint

Instructions:

Place the cubed lamb, one-third of the oil, oregano, basil, garlic, salt and pepper into a bowl. Mix well to coat the lamb with the spices and oil. Cover and refrigerate for at least 3 hours, or overnight.

-Preheat grill. Arrange lamb on skewers and grill, turning occasionally, until medium. Set aside on a plate.

-For the dressing whisk together 6 tablespoons of oil, vinegar, mint, salt and pepper.

-On four plates arrange the spinach, feta, tomatoes, cucumbers, capers and olives, top with the cooked lamb, and drizzle the dressing over each salad. Serve with crusty warm rolls or scalloped potatoes. And lemon bars for desert.

Lemon Bars:

Crust:

1 cup butter
1/2 cup powdered sugar
1/2 tsp salt
2 cups flour

Filling:

4 beaten eggs
2 cups sugar
1/2 tsp baking powder
1/4 cup flour
1/4 cup fresh lemon juice

Glaze:

1 cup powdered sugar
2-3 tablespoons lemon juice

Directions:

For the crust: Preheat oven to 350 degrees

Beat the butter and powdered sugar until smooth. Add the salt and flour and mix well. Press into a greased 9 x 13 pan and bake 20 minutes.

While the crust is baking, mix the filling ingredients together, then pour onto hot crust and bake an additional 20-minutes until set. Remove from the oven and cool.

Mix the powdered sugar and lemon juice glaze ingredients together until smooth and drizzle over top of lemon bars. When set, cut into 15 squares.

Authentic Thai Chicken Stir Fry

Want to cook Thai stir fry just like the restaurant? Surprise your family and friends with this authentic Thai recipe.

The key of having that authentic Thai stir fry taste lies in the coconut milk, every other ingredient has to maintain the same ratio with how much coconut milk you put in.

Basic ingredients:

1 quart water
3/4 cup coconut milk
2 cups uncooked jasmine rice
1 1/2 cups chopped fresh basil leaves
1 tablespoon olive oil
2 tablespoons fresh ginger root, minced
3 tablespoons soy sauce
3 tablespoons rice wine vinegar
3/4 teaspoon red pepper flakes
1 1/2 tablespoons fish sauce
1 medium onion, sliced
5 green onions, chopped
3 cloves garlic, minced
3 shiitake mushrooms, sliced
2 pounds skinless, boneless chicken breast halves, cut into 1/2 inch strips

Ingredients adjustment (base on personal taste):
Spicy - Add more red pepper flakes and chile oil.
Blend - Less vinegar and more mushrooms.

Directions:
1. Boil rice and water in a pot.
2. Cover pot, reduce heat to low for 20 minutes.
3. Mix the following in a bowl:

- coconut milk
- soy sauce
- rice wine vinegar
- fish sauce
- red pepper flakes.

4. Heat oil with skillet over medium-high heat.
5. Stir in ginger, onion and garlic.
6. Cook until lightly browned.
7. Add chicken strips, cook for 3 minutes (or until browned).
8. Stir in the sauce from the bowl.
9. Cooking until sauce is reduced to 1/3.
10. Mix in green onions, basil and mushrooms.
11. Cook until everything is heated through.
12. Serve over the cooked rice.

Ingredients: • 1 bakery-bought half-sheet cake, frosted white • 1 bakery-bought 10-inch layer cake, frosted white • 1 bakery-bought 8-inch layer cake, frosted white • 12 to 15 wedding theme decorated cookies • Silver dragees Directions: Place 10-inch layer cake in the center of sheet cake. Place the 8-inch layer cake on the top of the 10-inch layer cake. Decorate the top and sides of the cake with the cookies by gently pressing them into frosting. Finish decorating with dragees.

How to Lose Fat Fast!

There are a select few among us who are lucky not to gain weight easily. For the rest of us, gaining weight and fat is a reality of life. Most people struggle with their weight for their whole life without finding the right solution. A few others starve themselves to death to lose the weight only to gain in back fast. At the end of the day, losing fat and becoming more healthy is more about changing your lifestyle rather than adopting a strict diet for a few months or a few years. As long as you are dedicated to losing weight and change your lifestyle accordingly, the fat will come off by itself.

A lot of us are impatient when it comes to achieving our body of dreams. You can't expect to undo the damage you have done to your body in years in just a few short weeks. Losing weight and adding muscle takes time. The very first step in your fat loss program should be understanding this very fact. It's easy to lose patience and give up on your diet. But that would not do you any good.

In order to burn fat, you need to adopt a training regimen that helps you increase your metabolism to burn more calorie. Lifting weights and exercising for 30 minutes a day can help you lose an extra few pounds every month. You should also remember that water is your friend when it comes to losing fat. You should take a lot of water to keep your body healthy and let it start dropping fat. If you don't take enough water, your body tries to adjust and conserve water, and that could set you back in your efforts.

Eating smaller meals a day can also help you burn fat. Now that may sound unintuitive but in reality by taking smaller meals more often you helps your body lose weight more easily. Just make sure you don't go overboard. I am sure you have seen those commercials that show you how you can lose weight by eating Pizza, cake, chocolate, and cheese. In reality, you should set a proper plan to make sure you don't go overboard with your meals. You should count calories extensively as it has been proven by research that the amount of calorie you take in is the most important factor when it comes to losing or gaining weight.

Agar-agar ambrosia recipe

Agar-agar is like Jello. It can be a nice dessert presentation. It is easy and fast to prepare. Types of Soap Making Oils

Making soap fragrance oils used in soap making. There are a variety of oils, which can be used to produce soap. Each oil has different properties so that the hydrolysis process is a bit 'different for everyone, and the resulting manufactured in varying degrees in the soap.

Each oil should be used in a slightly different amount. The following is a brief list of the many oils that are used to make soap, the qualities of each, the set where each should be used and ifeveryone should be added to soap. (Planned stadium for track use superfatting oils are oils, and should not be your recipe to be considered for the calculation of the standard solution).

Apricot kernel oil:
Good moisturizer helps skin soft 2.1 ounces per pound of fat

Avocado Oil:
Preservative / antioxidant, great moisturizer contains vitamins A and B, D, E and lecithin, good for children's soap, and useful for dry orwrinkled skin

Beeswax:
Makes it harder soap contains a high percentage of unsaponifiables, skin protectant, often used in hand salve and lip balm

Calendula oil:
Heals a large number of appeals first Skins 2.3 tablespoons per 5 pounds of soap or tracks, up to 20% as base

Canola oil:
Less saturated, it can be slowly hydrolyzed, must be mixed with other saturated fats / oils, can be used in place of more expensive oilsUp to 50% of the base

Cocoa butter:
Makes it harder soap, excellent skin softener and lubricant, has a natural scent of chocolate 1 ounce per pound of fat trace, or 15% of the base

Coconut oil:
foam makes it great, but can the skin if too high a percentage of base oils are drying very difficult to make a white soap, saturated fatty acids 20-30% of the base

Lard (pig fat):
Cheap, readily available, is a white, frothy barSoap, without other oils, not soft and well in cold water up to 70% of the base

Olive oil:
Excellent oil base or clothing extra virgin, the lower the score, the better, moisturizes and softens the skin, from very mild Up to 100% of the base

Palm kernel oil:
Has most of the same qualities of palm oil foaming, good, hard soap is a base of 20-30%

Palm Oil (vegetable tallow)
Make hard soap, mild; good substitute forTallow in all vegetable soaps, moisturizes and soothes dry skin 20-30% of the base

Sesame oil:
Said to be good for dermatitis, eczema, arthritis and rheumatism, moisturizing, scent of hazelnut strong, makes a soft bar, except in conjunction with other, more saturated oils used in addition to 10% based

Shea Butter:
Many substances that do not interact to do with spirits and living to nourish the skin with soap 1 3.2 tablespoons per 5 pounds of fat, has theTrack, or up to 20% of the base

Soybean oil / vegetable oil:
foam economic, readily available and produces mild, stable, make hard soap up to 50% of the base

Sunflower oil:
Preservatives, and less expensive alternative to olive oil contains vitamin E and less saturated oil must be mixed with more saturated oils, soap making can take longer to prosecute and treat 15-20% of the base

Vitamin E oil, oil based
Preservatives and antioxidants;Good for the skin up to 10% in addition to the base

Vegan Roast - Woodland Roly Poly Pie

Time From Cupboard to Plate: 60 minutes
Serves: Four Portions

Ingredients:

Pastry:
Plain Flour, 3 cups
Olive Oil, 4 tablespoons
Salt, pinch
Mustard, 1 teaspoon
Water, to mix

Filling:
Dried Mushrooms, 1 cup
Fresh Mushrooms, 4 medium
Onion, 1 large
Red Pepper, 1 large
Peanut butter, 1 tablespoon
Olive Oil, 1 tablespoon
Stock cube, 1
Boiling Water, 240ml
Pine Nuts, 1 handful
Garlic, 2 cloves

Recipe:

Pour boiling water over the dried mushrooms and leave them to soak. When ready, strain and rinse.

Pastry: Mix the flour, mustard, salt and olive oil in a bowl. Add water slowly, a bit at a time mixing in until you have a firm dough. Leave to one side.

Filling: Chop the onion and fry in a little oil until soft, add diced pepper, chopped garlic and then sliced fresh mushrooms. Make up the stock with 240ml of boiling water and add in tablespoon of peanut butter, mix together and then add to the rest of the filling along with the re-hydrated dried mushrooms. Keep filling on a medium heat to reduce sauce down. Once it is a nice thick sauce like consistency, remove from the heat and leave to cool a little.

Lightly grease a baking tray.

On floured, flat worktop roll out the pastry dough into a rough rectangle shape about 6mm thick. Spoon the filling out evenly across the pastry leaving a good 3 cm boarder around the edge with the mixture about 1cm deep. Be careful not to overfill the pastry, left over filling can be frozen or made up into other pies. Sprinkle the pine nuts evenly across the mixture.

Fold in the boarders on all four sides onto the mixture. Fold it again along just the far long edge and then carefully continue to roll it up as you would a Swiss roll cake. This is where if you have overfilled it the filling will come spilling out so take evasive action and scoop some out if that starts to happen. If the pastry is too thin or the mixture too hot it can split the dough.

Carefully transfer the roly poly from the worktop to the greased baking tray and cook in the oven at 1900C for about 30 minutes, until the pastry is golden.

Serving:

Slice the roly poly into portions and serve with your favourite green vegetables. Families beware that the two end sections rapidly become the most desired slices and arguments can ensue without careful management!

Organic coconut oil will help your body fight bacteria that cause a variety of illnesses. It also helps prevent high blood pressure, heart disease and cancer. We would normally think of this oil as a condiment or simple cooking oil but it is so strong that it has even been known to help those with HIV maintain better quality health.

You're probably thinking about how a coconut tastes and why you would want to add this flavor to a variety of dishes. We think of the coconut as having a very sweet flavor that would not go well with dishes such as chicken or spaghetti sauce. We usually associate coconut flavor with sweets like frosting, candy, rice pudding, etc. You will notice that a coconut itself is not very sweet should you eat it in it's true form- in fact it's fairly mellow in flavor. The flavor is perfectly subdued and enjoyable. You may notice that you're more full after eating coconut than you'd be from eating any other fruit! I first used this oil in my pasta sauce when I ran out of olive oil. I had no idea what I was missing! I'm Italian so I take pride in making my sauce. I always try to compete with my mom to see if I can beat her sauce. I struggled for years to get my sauce to taste even remotely like hers. Guess what? It was better... and all with my secret ingredient! The oil brought out the flavor of every single spice I added to the sauce, magnifying the flavor times ten. I couldn't believe how good it was. I'll leave you with a few recipes I gathered online. You can also get recipes from Food Network and substitute another oil with organic coconut oil. Prepare to look great on the outside all winter long and feel great on the inside for many years to come! You can buy this oil at your local health food store and occasionally the grocery store- but make sure it's organic!

MARRAKECH CHICKEN AND LENTILS
Ingredients:
· 1tbsp. 100% Pure Virgin Coconut oil
· 4 skinless chicken breasts chopped into pieces
· 6oz wholemeal flour
· 8oz brown lentils, rinsed and picked over
· 1 bunch spring onions, chopped
· 12 whole dried apricots (3 oz.), quartered
· 5oz golden raisins
· 2oz fresh parsley, chopped
· 1/2 tsp. fresh ginger, chopped
· 1/2 tsp. Salt, or to taste
· 1/4 tsp. EACH ground allspice, cinnamon, cumin and red pepper (cayenne)
· 120ml water with 1 teaspoon of vegetable Bouillon powder dissolved into it.

Heat oven to 350°F. Heat the coconut oil in a frying pan Coat the chicken pieces with flour, shaking off excess. Add to frying pan and cook until lightly browned, about 5 minutes. Remove and place on a plate. Add lentils, spring onions, apricots, raisins, parsley, ginger, salt and spices to frying pan. Cook, stirring, for 1 minute. Transfer to an ovenproof dish. Put the chicken on top. Add water, cover and place in oven. Bake 30 minutes, uncover and bake 20 minutes longer or until chicken and lentils are tender. Serves 4

Make a delicious dessert drink by melting organic coconut oil and adding it to a banana shake!

ORGANIC CARROT CAKE
Ingredients:
· 8oz organic grated carrots
· 8oz organic soft brown sugar
· 6oz organic virgin coconut oil
· 4oz organic plain wholemeal flour
· 2oz organic chopped walnuts
· 2 organic free range eggs
· Grated zest of 1 organic orange
· 1 teaspoon bicarbonate of soda
· 1 teaspoon ground cinnamon

Beat all the above ingredients together and place in a baking tin greased with virgin coconut oil.Cook in preheated oven at 180oC / 350oF for 45 - 60minutes. (Check with a metal skewer - the cake is ready when it doesn't stick!)
