Traditional and Non-Traditional Pies For Your Holiday Table

If you are wondering what pies to make for the holidays, why not go with this quick and easy AMAZING SPLENDA COCONUT PIE. This pie makes its own crust and only bakes for 40 minutes. If you don't like coconut or just want a more traditional pie but still want an easy to prepare one, try this recipe for a Very Easy Apple Pie.

AMAZING SPLENDA COCONUT PIE

2 cups milk

3/4 cup Splenda granular

1/2 cup baking mix (Bisquik-type)

4 eggs

1/4 cup butter

1 1/2 tsps vanilla

1 1/2 cups angel flake coconut

Preheat oven to 350 degrees.

Combine milk, Splenda, baking mix, eggs, butter, and vanilla in blender. Cover and blend at low speed for 3 minutes. Pour mixture into a greased 9-inch pie plate. Let stand for 5 minutes then sprinkle with the coconut. Bake at 350 degrees for 40 minutes.

VERY EASY APPLE PIE

pastry for a double crust pie

7 cups peeled and sliced apples

3/4 cup Splenda granular

1 tsp ground cinnamon

1 1/2 tbsp butter

Preheat oven to 425 degrees.

Line a 9-inch pie pan with pastry crust. In a large bowl, combine the apples, Splenda, and cinnamon and stir until apples are coated. Pile into the pie plate. Dot with the butter. Cover with another sheet of pastry and fold edges over to seal. Flute with a fork or use fingers to press a design on the edges. Cut small slits in the top pastry to allow steam to escape. Bake at 425 degrees for 50 minutes or until the crust is brown and the apples are tender. To check apples, pierce with a fork through one of the steam vents.

This pie is great with a scoop of sugar-free vanilla ice cream!

Kefir Tropical Smoothie

Kefir is the new "old" food on the market for health! It has been a part of traditional cultures for thousands of years for its health benefits. Now it is becoming popular for boosting the immune system and restoring the intestinal flora in the digestive tract. Here is a smoothie that is healthy and tastes delicious. It is a wonderful way to get all the beneficial bacteria in your daily diet. The yogurt in the recipe adds additional benefits.

What You Need:
1 15 oz. can pineapple chunks, with juice
2 bananas
1 apple, diced
¼ - ½ cup coconut water
1 cup yogurt
½ - 1 cup kefir
6 ice cubes
Coconut flakes, unsweetened

Pour the pineapple chunks with the juice into the blender. Slice the bananas in chunks and put them in with the apple, coconut water, yogurt and ice cubes. Blend on ice setting until smooth. Then add the kefir and stir or blend in on a slower speed. It is recommended to put kefir in last to maintain the active bacteria. Heat and too much whipping will destroy them. Top with a sprinkle of coconut flakes.

The pineapple is full of vitamin C. The bananas and coconut water provide an excellent amount of potassium, which is so important during the hot weather months, or when you are recuperating from illness. The apple has fiber and vitamin C and supports the heart and cardiovascular system. Yogurt and kefir both have good bacteria but have different strains. Kefir has more strains of bacteria than yogurt and also has good yeasts. These are all essential to reestablish in the digestive system.

So make a kefir smoothie every day to keep replenishing all that good bacteria. Your immune system will thank you.

Greenlife Grocery in Asheville NC on Merrimon Avenue Downtown

GreenlifeGrocery.com is the one of the main places for healthy groceries and great prepared food near downtown Asheville. It is located on Merrimon Ave right across from Staples and Bojangles. One of my friends runs in there all of the time looking for their Coconut Creme Cake. They have been in the area for years. They have a lots of parking, a seating area outside, and a seating area inside to the right. Great business! The Pioneer Building, the first building of the 5 Points Village, is near completion and about 1000 feet away from Greenlife Grocery.

Castle Cake

This cake was a castle cake made to go with Disney Princess dolls. The family loved the look of fondant cake, however didn't want to spend a lot of money. This cake was all buttercream with coconut filling. It was very simple to make and I didn't need to spend several days to make. It took longer to assemble the towers than anything else.I covered the tower toppers with melted red chocolate so that sprinkles could stick.

What Did You Eat Today That Made You Tired?

Most of us think we eat a healthy diet with an occasional treat to reward ourselves for being so good.

Great! But does your healthy diet look something like mine did:

Breakfast: Two thick slices of white bread with a healthy spread, not butter! Marmalade or marmite as well.
Snack: Low fat crisps, cup of tea with milk.
Lunch: skipped it as was too busy, or maybe grabbed a low cal cheese and onion Sandwich on Granary Bread from the shop as I did not have time to prepare lunch for work. Can of something Diet to drink.
Snack, coffee and sugar as I was tired, maybe a cake as well as I had been working hard!
Dinner: Large bowl of pasta with pesto, cheese over the top, garlic bread. Trifle or cheesecake.
Glass or Two of wine to reward myself(again) as I had worked so hard and deserved it.

What's so wrong with that? It's a normal days food, I'm a vegetarian, so you may want to add a chicken, steak, gammon, maybe some fries and a take away burger to it as well!

So what is this typical days food missing, how can you stop the mid afternoon slump, the stubborn fat that sits around the belly and how can you have more energy?

1. Cut the Breakfast Bread & Cereals. Some of us are glutent intolerant and aren't aware of it. Try something completely different, after all, who ever said you HAD to have a bowl of cereal with milk?
Try: Poached eggs on wheat free bread. Left overs from last nights stir fry. Tomatoes and a chicken breast. Wheat free Porridge with Coconut or Almond Milk

2. Cut: Snacks of diet drinks, crisps and chocolate which make you tired.
Try: Handful of Almonds, walnuts, pumpkin seeds. Make your own Hoummus and take it to work in a small tub with some sliced carrot. Drink more water, have a 2 litre bottle with you and sip it throughout the day

3. Cut: Skipping meals, This drops your energy and you will eat more later in the day.
Try: Prepare lunch at home to bring to work so you dont grab a fat filled mayonnaise covered sandwich. Make your own chicken breast wrapped in a Romaine Lettuce leaf for lunch. Wheat free pitta with hoummus or avocado salad filling.

Drink from your water bottle.

4 Cut: Coffee and Cake. This will make you feel even more tired and crave even more sugar later on in your afternoon.

Try: Sipping water from your bottle, add some lemon juice to make it taste different. Handful of nuts. Make a healthy cake with polenta and rice flour and almond milk.

5; Cut: Pasta. Again, you may have a gluten intolerance, and it leaves you bloated and tired
Try: Replace with Quinoa, a great protein enriched seed which can replace pasta very easily. Eat with roasted veg or have on the side with lean meat. Gluten free pasta made with brown rice is delicious and doesnt taste any different to other pasta, leaves you without a bloated belly and you dont get that tired feeling! Drink water.

So, have a look at what you eat, take a typical day and write it down in your diary. You may surprise yourself!

Just making some simple changes may change the way you feel, give you more energy for work or to spend more time playing with the kids. its not that difficult, I did it, and I was a picky eater. Tastes change as you change your eating habits for the better

Pumpkin Rice - Children's Health Food

Pumpkins are very popular in cooking. It can be fried, boiled, steamed, baked and even roasted. Small pumpkins can be eaten as squash or zucchini. Mashed pumpkin can be used in soup. In Middle East, pumpkin is used for making desserts such as halawa and yaqtin. In China, the leaves of pumpkin are used as an ingredient in soups. In India, kadu ka halwa is made from pumpkin, butter, sugar and other spices. In Japan, some take the pumpkin to serve as tempura. In Australia, pumpkin is commonly roasted before consumed. In Italy, pumpkin is used with cheeses for ravioli. In Thailand, small pumpkins are steamed with custard, sugar and coconut milk mix to become a Thai dessert - pumpkin custard.

Usually, kids like to eat pumpkin. It might be due to its sweetness taste and the cheerful color - orange. My kid likes to eat pumpkin meals as well. My wife started feeding him with pumpkin meals since he was 1 year old. Now, he is six years old and still likes to eat pumpkin very much. Pumpkin is his favorite food, and no matter the meal prepared in soup, porridge, rice, steam or stir fry, he will always ask for pumpkin.

I would like to share with you one of the simplest and easiest way to prepare pumpkin cooking. You can prepare it in meal box and let your children bring them to school. Normally, I will add it with green peas to make the dish looked better and also more nutritious. Here is the Pumpkin Rice recipe.

Cooking Methods: (servings for 4 to 5 people)

Ingredients:

a) white rice 160g rinse clean and take off the water
b) Pumpkin 220g removed skin and cut into cube
c) Chicken breast 130g cut into cube
d) Dried mushroom 7 pcs soak till soft, rinse off the water and cut into cube
e) Dried prawn 35g soak till soft, rinse off the water
f) Onion small 5 pcs, cut slices
g) Water 350ml ( including water of soaking mushroom &dried prawns)
h) Green onion few

Seasoning materials:

a) Soya Sauce 1 ½ tbsp
b) Dark Soya Sauce 1 tbsp
c) Salt half of tsp
d) Sesame oil 2 tsp
e) Pepper 1 tsp

Method:

1. Marinate chicken breast with few starch flour and soya sauce together with sugar for about 30 minutes.
2. Heat up the oil, fry onion small until fragrance and ready to use.
3. Heats up the oil again, fry fried prawns with low flame and add in mushrooms continue by put in the chicken. Stir fry till half cook; add in white rice and the seasoning materials. Put into rice cooker and add in water and cook till 80%.
4. After that, add in pumpkin and onion that fried earlier and cook the rice till dry.
5. Loosen out the riceï¼OEput some green onions when ready to serve.
6. Completed.

Cooking Tips:

1. Australia pumpkin normally easy to cook than local pumpkin, hence don't cut too small, around 1.5cm to 2 cm will do.
2. Separate the fried onion to two servings, one can pour into the ingredients while half cook, another servings can use when ready to eat. This will help the taste.
3. Chicken breast can replace by chicken thigh.
4. Water levels that use to cook rice depend on the type of rice that you use. Use the normal cooking water level as reference
5. Use fresh mushrooms, put them into hot water, then rinse off.
6. if use pot to cook, you can follow the same method (1) to (3), put all ingredients (except pumpkin & fried onion) into pot, put in appropriate water and cook till water is boiled. Don't use too big flame, change to medium flame till water dry off, continue by low flame and add on the pumpkin and fried onion. You may want to stir it from time to time so that the rice won't stick to the pot.

ZOO Animals ... in the Kitchen


These are Kid Friendly Recipes that are fun to make and perfect for any kids party, any time.

To make the foods even more fun for the kids, re-name the recipes to match the party theme. For example, Pigs in a Blanket can be called, "Piglets in a Blanket" for a Winnie the Pooh Party or Colorful Fruit Parfaits can be called, "Jungle Fruits" for a Zoo, Safari or Madagascar party.


Silly Face Pizza

You will need: English muffins (one half per guest), pizza sauce, shredded American or Mozzarella cheese; assorted pizza toppings. Split the English Muffins in half and give each child one half. Let each child add pizza sauce, cheese and the toppings of their choice. Bake pizzas on cookie sheet at 375 degrees F. for 5-10 minutes, or until cheese melts.


Crunchy Snacks

Combine your favorite treats in a large bowl (dried fruit, coconut, pretzels, raisins, candy coated chocolates, etc)... let your guests scoop out small cupfuls to snack on.


Pigs in a Blanket


Slice hot dogs lengthwise and cut cheese into strips. Unroll refrigerated croissants and stuff them with the hot dogs and cheese. Roll croissants back up and bake as directed, or until golden brown.


Design your own Teddy Bear Cookie


Make your favorite sugar cookie recipe or purchase refrigerated sugar cookie dough. Roll out dough and cut with a teddy bear cookie cutter. Cook as directed. Once cookies are cooled - let the children decorate with icing and different candies to make faces, buttons, etc.


Colorful Fruit Parfait


In a parfait cup, layer yogurt, granola and fresh fruit (make it colorful!!!). Top it with whipped topping and serve with long handled spoons.


Lunch on a Stick


Cooked turkey, chopped sliced cheese, chopped cherry tomatoes, squares of bread. Using a skewer, add on bits of each of the above!


Dessert on a Stick


Same as above but use fruits on the skewer instead of lunch food.

Enjoy these fun projects with your children by letting your imagination be your guide... be an "un-grownup", it's fun! The author has been an 'un-grown-up' for all of her adult years, way too many to brag about!

So a GREAT friend of mine had a birthday celebration about a week ago. She had to study for finals and wasnt going to do anything for her ACTUAL birthday... So i Made her a gift that i thought would lift her spirits, and make her birthday EXTRA special... The Cake is German chocolate, with pecan coconut filling and chocolate buttercream frosting all from Scratch.. The tissue, lid, and shoe are all made from Gumpaste... Everything on the board is completely edible, including the letters which were made from chocolate.... Buon Appetito!!

Strawberry Cake Recipes

If you are looking for an excellent dessert recipe and love southern cooking, this is the recipe for you. o Combine the cake mix and gelatin powder in a large bowl
o Beat in oil, eggs, water and strawberries
o Pour into two 9 inch round and greased cake pans
o Bake in a 350 degree oven for 30 minutes
o Cool and frost with strawberry icing
o For the icing, beat the butter and confection sugar until smooth
o Add the strawberries
o Spread between the layers of cakes
o Frost the top and sides

Ingredients:

o 1 box of white or yellow cake mix
o 1 cup of vegetable oil
o 4 large eggs

o 1 cup mashed fresh or frozen strawberries
o 1 cup chopped pecans
o 1 package of cream cheese, 8 ounces at room temperature
o 1/2 stick of margarine, 2 ounces at room temperature
o 1 teaspoon of vanilla
o 1/2 cup of chopped pecans
o 1/2 cup of strawberries mashed
o 5 to 6 cups of sifted powder sugar

Directions:

o Mix cake mix with the strawberry flavored gelatin
o Add the oil, eggs, coconut, gelatin and milk
o Beat until well blended
o Stir in one cup mashed strawberries and one cup of pecans
o Drizzle the cooled layers with reserved juice
o Spread with a layer of icing
o Ice the sides and top
o Store the cake and refrigerate

You can serve these delicious options of the strawberry cake recipe for any occasion. You can add in other ingredients such as rhubarb to add an extra tart flavor. You can also top with whipped cream or any other fruit topping you would like. Serve the cake right away or store in the refrigerator to keep it fresh.

How to Make a Low Fat Pumpkin Roll

If you have a sweet tooth, it can be very difficult saying no to sweet treats and desserts if you are watching your weight. Fortunately, there are some great low fat desserts, which you can treat yourself to without worrying about consuming too much fat.

We all need to eat some fat in order to be healthy, but some dessert recipes contain lots of fat and calories, both of which are unnecessary for a good flavor. Healthier alternatives can be just as flavorful, or sometimes more so, than the more calorie-laden snacks.

Take the following recipe for pumpkin roll, for example - the Splenda keeps the calorie count down and the pumpkin puree and walnuts give the cake all the great flavor it needs. You can use margarine instead of butter to make the filling if you want to, because the difference in taste will not be that noticeable. Use Splenda "baking sugar" in this recipe for all the flavor of sugar without the calories.

It is important to ensure you put enough powdered sugar on the towel so the cake does not stick to it. This recipe makes ten servings and you can serve it alone or with a cup of coffee for a satisfying mid-afternoon snack.

What you will need for the cake:


3/4 cup all purpose flour
1/4 cup powdered sugar
3 eggs
1/2 teaspoon each ground cinnamon, ground cloves, baking soda, and baking powder
1/4 teaspoon salt
2/3 cup pumpkin puree
1/2 cup Splenda
1 cup chopped walnutsWhat you will need for the filling:


6 tablespoons softened butter
8 oz softened cream cheese
1 teaspoon vanilla extract
1 cup powdered sugar, plus more for garnishHow to make it:

Preheat the oven to 375 degrees F. Grease a ten by fifteen inch jelly roll pan and line it with wax paper. Grease and flour the paper. Sprinkle the powdered sugar over a thin towel.

Mix the flour with the cinnamon, baking soda, baking powder, salt, and cloves and then beat in the Splenda and eggs. Beat in the pumpkin. Transfer the batter to the prepared pan and sprinkle the nuts over the top.

Bake it for about fourteen minutes or until the top of the cake is springy, then turn it on to the prepared towel. Peel off the wax paper and roll the cake up in the towel, beginning at the narrow end. Let it cool on a wire rack.

Beat the cream cheese with the powdered sugar, vanilla extract, and butter to make the filling. Unroll the cake carefully and remove the towel. Spread the cream cheese and butter mixture over it and roll it up again. Wrap it in plastic wrap and chill it for an hour or more, then sprinkle extra powdered sugar over it and serve.

Using applesauce as a partial substitute for oil when you're making a sugar free cake mix can help cut down on both the sugar and the fat in the recipe, making it better for both diabetics and dieters. Homemade Candy Recipes

Who says you have to wait until the holidays to make or have homemade candy that you love? I don't know about you, but that is a long time to wait for something you look forward to. So I say why wait, who cares, make homemade candy recipes any time you want.

Valentine's Day is another good time to make homemade candy. Instead of going out and buying a box of chocolates. Be creative make some chocolate covered peanut butter balls and decorate a plain brown or white box, white paper doilies and red hearts. Then tie it up with raffia or red ribbon to finish it off. To me that is way more special and meaningful than going out and buying a box, because they thought of it and made it themselves. What a great gift to get from your loved one!!!

How about serving chocolate covered coconut balls at a baby shower. Or what about sugar coated pecans at a bridal shower. Say at a kid's birthday party you make rock candy. Make your own peppermint, cinnamon, and other flavored hard candies. This rock candy can be made on a cookie sheet and then once cooled and hardened, broken into small pieces. You can even use a candy mold and make them into suckers. Isn't that a great idea for a theme birthday party!

You can make your holiday memories making candy with your kids any time you want. If you do have that special time that you want to keep with them for the holidays then make sure you keep that tradition going. That will always be a special time that you will remember together!

Cake and Biscuit Recipes

Try these out with this simple and easy recipes for cake and biscuits. It is surprising how little time it takes to prepare such satisfying favorites as cheese cakes, coconut tarts, peanut biscuits, coconut biscuits, peanut puffs and curry puffs.

Cheese Cakes Recipe

Pastry:
4 oz. flour
2 oz. margarine
1 tablespoon raspberry jam
cold water
Cake mixture:-
2 oz. flour, castor
sugar and margarine
1 egg
½ teaspoon baking powder
½ teaspoon vanilla

Method:
1. Sieve the flour for the pastry into a mixing bowl,rub in the margarine and make short crust pastry.
2. Roll out the pastry 1/10" thick and cut into rounds with a fluted cutter. Make 10-12 rounds.
3. Line the patty tins with the rounds of pastry and leave them aside to relax.
4. Cream the margarine and sugar for the cake mixture until light and fluffy.
5. Add in the beaten egg gradually and beat well.
6. Add in the vanilla.
7. Sieve the flour together with the baking powder and fold it into the creamed mixture.
8. Put a little jam into each pastry case and spoon the cake mixture over it.
9. Bake in a hot oven, at 400ºF, for 20 to 25 minutes.
10. When the cakes are nicely browned, cool them on a wire tray before serving them on a doily.

Coconut Tarts Recipe

Ingredients:
4 oz. short crust pasty
1 tablespoon raspberry jam
Filling:-
2 oz. margarine
castor
sugar
grated coconut
1 egg
½ teaspoon vanilla

Method:
1. Make short crust pastry and line 10 to 12 patty tins with it.
2. Cream the margarine and sugar till it is light and fluffy.
3. Beat in the eggs gradually and add in the vanilla.
4. Mix in the grated coconut.
5. Put a little jam in each pastry case and cover it with the coconut mixture.
6. Place crossed strips of pastry on top and bake in a hot oven, at 400ºF for 20 to 25 minutes.
7. When tarts are brown and well cooked, cool them on a wire tray before serving them on a doily.

Peanut Biscuits Recipe

Ingredients:
4 oz. flour
2 oz. margarine
1½ oz. castor sugar
1 oz. peanut (lightly fried, skinned and chopped)
½ teaspoons vanilla

Method:
1. Grease two baking sheets.
2. Sieve the flour into a mixing bowl and rub in the margarine.
3. Sieve the chopped peanuts. Keep the big pieces aside and add the finely chopped nuts to the flour.
4. Add the sugar and mix well.
5. Separate the egg and add 2 teaspoons of water and the vanilla to the egg yolk.
6. Add the egg mixture to the flour and mix quickly into a stiff dough. Add more water if necessary.
7. Knead the dough lightly on a pastry board, and roll it out to â...>" thick.
8. Cut into rounds or rings with fluted cutters. Lift the biscuits carefully with a table or palette knife on the baking sheets.
9. Brush the top with egg white and sprinkle the remaining peanuts on top.
10. Bake the biscuits for 15 to 20 minutes in a moderate oven, at 350ºF, until they are a pale brown color.
11. Cool the biscuits for minute or two on baking sheets before lifting them on to a wire tray to cool them further. Store biscuits in an airtight tin.

Coconut Biscuits Recipe

Ingredients:
4 oz. flour
2 oz. margarine
1 oz. desiccated coconut
1½ oz. castor sugar
1 egg
1 teaspoon vanilla

Methods:
1. Grease two baking sheets.
2. Sieve the flour into a mixing bowl and rub in the margarine.
3. Add the sugar and the coconut and mix well.
4. Separate the egg and add 1 tablespoonful of water and the vanilla to the egg yolk.
5. Add the egg mixture to the flour and mix into a stiff dough.
6. Knead the dough lightly and roll it out to â...>" thickness.
7. Prick the dough well with a fork.
8. Cut the dough into neat fingers or rounds and lift them carefully on the greased baking trays.
9. Glaze the biscuits with egg white and bake in a moderate oven, at 350ºF, for 15 to 20 minutes.
10. When the biscuits are cooked and are a pale brown color, take them out, leave them for a couple of minutes before lifting them on to a wire tray to cool.
11. Store cool biscuits in an airtight tin.

Peanut Puffs Recipe

Ingredients:
4 oz. short crust pastry
3 tablespoon fried peanuts
3 teaspoons fried gingelly seeds
3 teaspoons castor sugar

Methods:
1. Make short crust pasty, roll out to 1/10" thickness and cut into rounds with a plain cutter.
2. Chop up the peanuts and mix it with the sugar and gingelly seeds.
3. Put an equal amount of filling on each round of pastry, wet the edge of the pastry and fold it over to make a puff.
4. Seal the edge by pressing it together with a fork or by folding the pastry over to get a twisted edge.
5. Fry the peanut puffs slowly in lightly smoking oil till brown.
6. Drain well and serve on a doily.

Curry Puffs Recipe

Ingredients:
4 oz. short crust pastry
75 gram meat or 115 gram prawns
1 potato
1 tablespoon curry powder
½ Bombay onion
2 onions
a few curry leaves
salt
oil

Methods:
1. Wash and mince the meat or shell and dice the prawns.
2. Peel, wash and dice the potato and Bombay onion.
3. Peel, wash and chop up the onions.
4. Heat up 1 tablespoon of oil and fry the chopped onions.
5. Add the curry leaves and curry powder and fry for 2 to 3 minutes.
6. Add the meat or prawns and fry for another minute or two.
7. Add the potato, salt and ½ cup water. Cover and cook until the potato is soft and the filling is dry. Season well and cool the filling on a plate.
8. Make the short crust pastry, roll out to 1/10" thickness and cut it into rounds.
9. Put an equal amount of the cooled filling on each round of pastry, wet the edges of the pastry rounds, fold over to make the curry puffs.
10. Seal the edge of each puff with a twisted edge.
11. Fry the puffs slowly in lightly smoking oil till the pastry is thoroughly cooked. Drain well and serve with a sprig of parsley.

Cream Cheese Cake Frosting - A Simple and Delicious Recipe

It is always best to prepare desserts at home rather than get ready ones. You can easily make any type of cake and frost it to make it even more delightful. In order to make this exclusive chocolate custard dish, the chocolate chunks have to be melted in hot water. The milk has to be added, mixed well and put on the fire to be boiled. The sugar and the eggs have to be then mixed together. The milk and the chocolate have to be blended thoroughly. The entire dish has to be baked and served hot.

All-Filipino Desserts

All Filipinos seem to be born with a sweet tooth, and most of us never really outgrow it. We're never too old for a candy bar or a rich filled doughnut. That's why desserts have always been a big part of Filipino cuisine. For many of us, a meal isn't a meal without something cold and sweet to top it off. It doesn't matter if your meal consists of rice and dried fish; without dessert, it's simply not complete.

However, our idea of dessert has evolved a lot through the years. Ask any kid what his favorite dessert is and he'll most likely say ice cream, cake, or something not really Filipino. If you think the same way, maybe it's time you tried the old favorites and rediscover Filipino food. Here's a quick guide to local desserts and some Filipino desserts recipes you can make on your own.

Rice cakes

With rice as our staple food, it's really no surprise that we'd turn it into a dessert as well. In fact, we have more than a dozen varieties of kakanin, the local term for rice desserts, most of them sold at practically every corner. Because they are rice-based, they are seldom eaten after regular meals (which already have rice as the main course). People prefer them for merienda in the late morning or afternoon. Some of the most popular Filipino rice cakes are puto, suman, biko, bibingka, and kalamay.

Native pastries

If you're looking for a lighter dessert, Filipino pastries may be just what you need. Our native pastries cover everything from small bite-size tarts to tropical fruit pies. They may seem complicated at first glance, but they are actually one of the easiest Filipino food recipes. In fact, if you're just starting out, pastries make a great beginner recipe. Start with simple snack tarts such as this one.

Easy Caramel Tarts

Ingredients:

1 tbsp flour

1 c milk

1 c golden syrup

1 c brown sugar

1 tbsp white sugar

1 tbsp butter

2 eggs, separated

½ tsp vanilla

Procedure: Beat the egg whites until stiff, then beat in the white sugar. Set aside. In a saucepan, combine the rest of the ingredients and bring to a boil, stirring constantly. Pour into baked pastry shells. Top with the egg white mixture and bake for about 10 minutes or until the meringue turns brown.

Puto and kutsinta

Puto a steamed cake made from rice flour, often topped with cheese or salted eggs. It is often sold with kutsinta, a brown jelly cake served with grated coconut. The two go together because the soft, grainy texture of the puto contrasts the tart smoothness of kutsinta. Both are among the simplest Filipino recipes; you can make a batch of each cake in less than two hours.

Puto

Ingredients:

2 cups flour

1 cup sugar

2 cups milk

6 tsps baking powder

3 eggs (use only egg whites for a lighter cake)

Procedure: Combine all the ingredients except the egg whites. Mix well and let stand for one hour, then fold in the eggs. Pour into baking pan or muffin pans and steam for about one hour.

Kutsinta

Ingredients:

1 cup rice flour

1 tsp lye water

3 cups water

2 cups packed brown sugar

Procedure: Mix all the ingredients in a bowl; beat well. Half-fill a muffin pan with the batter, then steam covered over 2 inches of water for about 30 minutes. Top with grated coconut.

Bibingka

Bibingka is actually an Indian dish (bebinca), but the Filipino variety is unique because it uses rice flour instead of white. It also comes with a variety of toppings such as butter or margarine, cheese, salted eggs, or grated coconuts. Bibingka is a popular snack in the Christmas season, where it is often sold with puto bumbong (same as puto, but cooked in bamboo vessels and flavored with coconut or purple yam)and other Filipino cooking recipes. It is traditionally cooked in charcoal ovens, which gives it a smoky flavor. Of course, you can also tweak the recipe and bake it in modern ovens. Here's how.

Ingredients:

2 c plain flour

¼ c baking powder

¾ c sugar

1 ¼ c coconut milk

3 eggs, beaten

½ c Edam cheese, grated

½ butter, melted

½ c grated coconut

1 tsp salt

Procedure: Preheat your oven to 375oF. In a bowl, dissolve the sugar in coconut milks and add in the eggs. In a separate bow, sift the flour, add the baking powder and salt, then sift again. Combine with the egg mixture and beat well. Pour into prepared pans and bake for about 15 minutes. Top with cheese and resume baking for another 20 minutes, brushing with margarine occasionally. Give it a final brush when done, and serve with coconut on the side.

Jello Cake Recipe - Classic Jello Poke Cake Recipe

When you think of a Jello cake recipe, there's only one cake that is so popular that it immediately pops into your head: the classic Jello poke cake. This cake is famous for being extremely flexible in its use of gelatin flavors. When it's sliced into, you'll see the colorful stripes inside. Whatever flavor you use it's sure to be a hit.

1 package white or yellow cake mix (for two layers)

1 small package flavored gelatin, any flavor

4 eggs

1/3 cup oil

1 cup water (for the cake mix)

1 (12 oz.) container Cool Whip

1 cup water (for gelatin)

Directions

Preheat oven to 350 degrees.

Prepare cake, according to package directions, using eggs, oil and water. Bake cake in a 13x9-inch pan for 40 to 45 minutes. Let cake cool in pan for at least 15 minutes.

Poke holes across the entire surface of cake with a fork.

Dissolve the gelatin in 1 cup of boiling water. Pour the warm gelatin slowly over the surface of the cake (gelatin will soak into the cake). Place cake in the refrigerator and chill for about 4 hours.

Spread whipped topping on top of cake before serving. Refrigerate leftover cake.

=> Jello Cake Recipe: Jello Lemon Cooler Cake

This is a great cake to make for picnics and when company comes to visit. It's got a nice sweet and tangy tartness to it that will tingle your tastebuds.

1 package lemon cake mix

1 cup hot water

2 (3oz.) packages lemon flavored gelatin

1 cup milk

1 (3.4 oz.) package lemon pudding mix

1 (8 oz.) container Cool Whip, thawed

Directions

Prepare cake mix according to package directions and bake in a 9x13-inch pan. Let cake cool, then poke holes across the entire cake surface using a fork.

Dissolve the lemon gelatin in 1 cup of hot water. Pour warm gelatin over the entire cake. Place cake in the refrigerator and let it cool.

In a large bowl, mix together the milk, lemon pudding mix and the remaining package of lemon gelatin; stir until all ingredients are thoroughly dissolved. Fold in the whipped topping and spread over top of cake. Refrigerate until ready to serve.

This strawberry Jello cake is something special. The perfect Jello dessert recipe for warm afternoons and those special occasions when you want to make a dessert they'll be talking about for days.

1 package white cake mix

1 (3 oz.) package strawberry gelatin

3 tablespoons flour

1/4 teaspoon salt

1 cup oil

1/2 cup water

4 eggs

1 (10 oz.) package frozen strawberries

Directions

Preheat oven to 350 degrees.

In a large bowl, sift the cake mix, flour, gelatin mix and salt together. Stir in the oil and water. Beat well. Add in the eggs, one at a time; mix well.

In a medium, bowl mash up the entire bag of strawberries. Stir half of the strawberries (5 oz.) into the cake batter. Pour cake into 2-layer cake pans and bake for 30 minutes. Let cake cool and spread strawberry icing on top.

Strawberry Icing

1 stick butter

1 box confectioners' sugar, sifted

Directions

Cream the butter. Gradually add in the sugar and the remaining mashed strawberries. Mix until icing is a smooth, creamy texture.

Just like the poke cake, this Jello pudding cake is flexible when it comes to flavor. Choose the flavor that you want and enjoy a moist, rich-tasting cake that will not last for very long, because it's so scrumptious.

1 (12 oz.) can fruit flavored soda (any flavor)

1 small box gelatin (same flavor as soda)

1 cup warm water

1 small box vanilla pudding

1 container Cool Whip

Directions

Prepare cake according to package directions. Bake cake in a 13x9-inch pan. Let cake cool. Poke holes into cake surface with a fork. Pour flavored soda over cake.

Dissolve gelatin into 1 cup warm water. Pour gelatin over the entire cake.

Prepare pudding according to package directions. Spread pudding over top of cake.

Spread whipped topping over top of entire cake. Refrigerate cake until ready to serve.

Satisfy Your Chocolate Craving - Without Adding Inches!

Do you Crave Chocolate?

Most of us do, some more then others. Did you know the average American consumes around 12 pounds of chocolate per year? While that may be true, but why do we crave chocolate? After doing a little digging, to confirm what I knew to be true. . . eating chocolate makes you feel good. We feel relaxed after we eat chocolate.

The scientific reason is because the chemical called serotonin found in chocolate is a neurotransmitter that regulates many functions, including mood, appetite, and sensory perception.

Fantastic, we can eat chocolate. . . . but what about the potential weight gain if we eat to much?

Remember the old adage "everything is good for you in moderation!" Keeping that in mind, the chocolate lover in all of us can enjoy the wonderful flavors of chocolate, in moderation. The key is to find a satisfying chocolate treat that keeps one from over indulging. . . which would lead to the waist line issue.

Here are two perfect solutions to help satisfy the chocolate craving without the guilt from going overboard!

Solution Number One:

Find one Chocolate treat you really enjoy eating, break it into portions. . . this way you satisfy the craving without the guilt. Eat what you like just less of it. Doing this solves two situations. First you feel better now that you had a chocolate treat and because you ate only a small piece you don't feel like you have to go to the gym and exercise for an hour!

For Example: I have this fantastic recipe for Coconut Almond Chocolate Chunk Cookies. My all time favorite. Bake these chocolaty delightful cookies, share some with your friends, which by the way they will LUV these cookies, and freeze the rest. They last for a few months in the freezer, although they have never made it past about 6 weeks in my freezer.

Everyday after lunch or dinner treat yourself to a cookie. One cookie, okay sometimes two. If you make them small and it is one of those days where you need just a bit more, go ahead eat another one, they're small. Pretty easy solution, right!

Solution Number Two:

Food Exchange. There might be several dietitians who would not agree with this solution, but when you really want a decadent chocolate desert, try eating less the meal before the meal in which you know you are going to eat a tasty dessert.

For example, you have been invited to a birthday party. . you know there will be cake, cut back on the amount you eat for lunch because you are going to a birthday party that evening. It works every time. You will enjoy each and every bite of that birthday cake. And try not to worry about the calories. That would just take the pleasure out of eating a delicious dessert.

Keeping in mind that everything is good for you in moderation, find great recipes that allow you to freeze a tasty treat. Enjoy a little at a time without worry about inches. Try not to deny yourself those good feelings you get from eating chocolate!
