Thomas the Tank Engine Birthday Cake

This is a cake made by my wife for our son's 5th birthday. It is a chocolate cake covered with icing that has been colored green and sprinkled with green coconut. The tunnel is made out of an oatmeal container that has been cut in half.

Eat Clean with Yummy Cake-Like Organic Manna Bread

hotandhealthyliving.com Anything sweet (or even remotely dessert-like) always scores big points with me in the taste department. While I could easily polish off a huge piece of cake any day (somehow I muster up the control not to do this), its definitely a challenge to find healthy sweets that align with a whole foods diet. Every time I grocery shop, I keep my eyes peeled for the latest and greatest truly healthy sweet find. Unhappily, I rarely come across a convenience food that meets my ridiculously strict whole foods diet nutrition criteria. Manna bread, I am overjoyed to say, exceeds even my requirements for a sweet find. Lets start with taste. Manna bread is a muffin-y, cake-like tasting bread that is sweet, moist and chewy all at once. Its also extremely satisfying. If Im having a sweet craving all I need to do is slice some manna bread, spread it with some raw almond butter and put a few dried apples on top. Its also amazing with raw honey and a bit of hardened (butter-like) extra virgin coconut oil on top (I especially like Barleans brand of coconut oil). If Im really needing something totally decadent, Ill use manna bread as the base for a chocolaty dessert; simply cut a slice of manna bread, spread a thin layer of peanut butter on top, place a few mini dark chocolate chips (such as Ghirardelli 60% Cacao Bittersweet Chocolate Chips) on top and pop the whole thing in the microwave to melt the chocolate and heat the manna bread. Top it with one heaping tablespoon ...

How to Make a Delicious Banana Split Cake Without Eggs

Many people don't like the idea of eating raw eggs even when they are concealed in a recipe. If you are one of those people, as I am, here is a great recipe for a delightful Spring (or anytime) Dessert. This Banana Split Cake is made without using eggs. It is a beautiful dessert anytime of the year. However, it is an especially great dessert for Springtime and for your Easter table or buffet. For an Easter dessert, you could color some coconut green by using a dab of green food coloring. Sprinkle over the top of the cake or gather in the center and top with some jelly beans or miniature malted milk ball eggs to really impress the children in your family.

NO EGG BANANA SPLIT CAKE

2 cups graham cracker crumbs
1/2 cup melted butter
1/2 cup chocolate syrup
2 cups powdered sugar
1/2 cup butter (not melted)
3 bananas
1 pint strawberries
1 cup crushed pineapple, drained & reserved
1 carton (9-oz) frozen whipped topping, thawed
1/2 cup chopped pecans
marashino cherries for garnish

In a small mixing bowl, mix together the graham cracker crumbs and the melted butter until well mixed. Spread the mixture onto the bottom of a 9 x 2 x 13-inch pan or casserole dish. Drizzle the chocolate syrup over the crust. Combine the powdered sugar and the (not melted) butter together and beat until fluffy. Pour this sugar mixture over the chocolate syrup. Slice the bananas into the reserved pineapple juice, drain and add along with the strawberries over the sugar mixture. Top evenly with the pineapple. Spread the whipped topping over all. Sprinkle the chopped pecans over the whipped topping and add cherries, as desired, for garnish.

Recipe for a Perfect Mother's Day

Ingredient #1: Let mom sleep in. This means being quiet on Mother's Day morning. No loud TV or loud music before mom decides to get out of bed. No loud complaining of "Mom, I can't find my shirt, pants [or any other article of clothing which mom is somehow magically supposed to, and surprisingly often does, know where it is]." Surely you can find something semi-clean to wear. :-) Better yet, just give mom some earplugs the night before so she can simply sleep through anything.

Ingredient #2: Let mom have breakfast in bed. In order to make sure this can actually happen, make sure you know where all of the ingredients, bowls, utensils, and other items you'll need are in the kitchen. Make a list of everything you'll need and make sure you know where all of it is the night before. I have included an easy breakfast recipe at the end of these "ingredients." It has just 6 ingredients and all you need is an electric mixer, bowl, and two bread pans. Under no circumstances should you wake mom up in order to find out where something is. Improvise. If it doesn't turn out, a nicely arranged bowl of cereal that she didn't have to make is still a nice Mother's Day breakfast.

Ingredient #3: Let mom have the day off. This means no cooking, cleaning, laundry, or running errands. Chances are pretty good that she does one or more of these things the other 364 days of the year. Let her have Mother's Day off. If she starts doing one of those things, pleasantly surprise her and offer to do it yourself. And for you kids, I am going to invoke the right of all mothers, she endured X hours of labor in order to bring you into the world, certainly she deserves one day a year off.

Ingredient #4: Tell her "I love you" at least once on Mother's Day. You know she loves to hear that sappy kind of stuff so indulge her. Telling mom you love her does not make you less cool, less of a rebel, less of a man, or any of the other things you might be worried about. Yes, I realize I have just dated myself but I am hoping that you still get my point. Mom loves you. Admitting that you love her too is okay. You can still be yourself and love your mom.

Ingredient #5: Give mom the gift of your day. Give her your attention for the day. Perhaps even have a meaningful talk about something important going on in your life. Moms love that kind of stuff. Let her choose what the family will do on Mother's Day. In a world where we never seem to have enough time for each other anymore, let her have you all to herself that day. Who knows, you might even enjoy having that special time with her.

Here's the easy breakfast recipe I promised.

Poppy Seed Bread

1 package yellow cake mix
1 package instant coconut cream pudding
1 cup hot water
1/2 cup oil
4 eggs
1/4 cup poppy seed

Put all of the above ingredients in a large bowl. Mix all of the ingredients together with an electric mixer on low speed for 4 minutes. Pour the mixture evenly into two bread pans and bake at 350 degrees for about 40 minutes. (A toothpick inserted in the center should come out clean.) Allow the bread to cool for about 30 minutes (it should be just slightly warm to the touch) and then carefully take a table knife and run it around the edge of the pan. Using the table knife or your fingers, gently loosen the bread from the bottom of the pan. Turn the pan upside down over a plate. The bread should slide out. If it doesn't, gently tap the bottom of the pan to loosen it. Turn the bread right side up, slice it up and you are ready to serve it to mom.

Discover Easy Ways to Decorate Your Christmas Cake

For many people Christmas time is a hectic round of shopping, cooking, writing cards and wrapping presents. And very often decorating the Christmas cake is left to the last minute, so here are some tips to help you along the way.

One of the quickest designs is a pattern using any of the following: semi-dried fruits, glace fruits, angelica, cherries and different types of nuts. But keep to three or four varieties, otherwise the design becomes too cluttered. If the top of the cake is rounded, cut off, and upturn the cake so the base becomes the top surface. Boil half a jar of apricot jam and press through a sieve. Brush the top surface of the cake with the jam, and cover with a design of fruit and nuts - a circular design for a round cake and straight lines for a square cake. To give the decoration an attractive shine (and to hold the fruit and nuts in place) brush over with jam, and lastly, tie a wide, red or green ribbon around the cake. A similar decoration can be made with marzipan fruits.

If you wish to spend slightly more time, decorate the top of the cake with soft icing, and as before, use ribbon, a cake frill, or a strip of Christmas paper to place around the sides. Again use the base of the cake as the top surface. Roll out sugarpaste (rollout icing) or marzipan, until it is slightly larger than the top of the cake - make sure the paste moves freely. Brush the top of the cake with apricot jam then upturn the cake onto the sugarpaste, and cut away the surplus paste. Place the cake on a cake board. Roll out a length of paste, approximately half inch deep, and cut a strip the same size. Moisten the paste around the edge of the cake and carefully position the strip on the moist surface. Make a design on this edging with cake crimpers - if you have them. Failing that, press the decorated handle of a spoon into the paste. Make an unusual decoration for the centre of the cake by colouring some marzipan red and modelling it into a candle shape. Use a flaked almond for a flame, and then surprise everyone by lighting the almond on Christmas Day - as nuts contain oil the almond will flame for a few moments!

Make Christmas trees from a cone-shaped piece of green marzipan. Use sharp scissors and beginning at the top, make small snips all around the tree. Make snowballs from balls of sugarpaste, very slightly moistened and covered in castor, or granulated sugar. To make holly leaves, roll out the paste and cut into a diamond shape. The sharp points are made by cutting out sections from around the edge of the leaf, with either an icing nozzle or the tip/handle of a small spoon. Mark veins on the leaf with the back of a knife.

For those who wish to venture into the field of royal icing, a quick way to use this icing is by making a 'snow scene'. First, apply a layer of marzipan to the cake and leave to dry for two days. The traditional way of making royal icing is with egg white and icing sugar, but icing sugar is now available which already contains the correct quantity of dried egg white - however, the icing still needs a good beating!

Test the icing before applying to the cake. Using a palette, or table knife, apply the icing about half an inch deep to the cake. Then, using the flat surface of the knife makes a slow 'bouncing' movement on the icing. The icing will stand in peaks if it is the correct consistency. Leave until firm and sprinkle with edible glitter for a sparkling cake. HAPPY Christmas

Luscious Carrot Cake For Carrot Hater

Carrot is a nutritional vegetable. It contains huge amounts of beta carotene which is the essential precursor of vitamin A. Beta carotene is a potent anti oxidant agent, proven to fight cancer cells and help body defense system. Pectin, an anti cholesterol agent, is another essential substance found in carrot. Fewer amounts of potassium and vitamin C are also found in carrot.

Some peoples dislike carrot, as a result they do not include carrot in their daily menu. An alternative way to make carrot based food is necessary to help them to love carrot. Carrot cake seems to be a suitable meal for them.

To make carrot cake, the first thing you have to do is to prepare these:


Wheat flour, 120 grams
Maize flour, 20 grams
Baking powder, a half teaspoon
Egg white, 250 cc
Sugar, 200 grams
Cake emulsifier, a half tablespoon
Salt, a half teaspoon
Sweet condensed milk, 100 cc
Carrots, 200 grams, rasp first, squeeze and take its water.
Orange dye

Carrot cake is easy to be made, follow these steps to make it:


Stir the egg white with sugar, cake emulsifier, and salt until it is soft and expanding.
Add the sweet condensed milk. Keep it stirred while wheat flour, maize flour, and baking powder are added to the dough.
Separate the dough into 2 parts, Dough 1 and Dough 2. Add carrot and orange dye into Dough 1, stir well.
Lubricate a baking pan using margarine, and pour some amounts of Dough 1 into the pan. Steam it for 5 minutes.
Pour Dough 2 into the pan, and steam it for 5 minutes.
Pour Dough 1 again into the pan, and steam it for 5 minutes, continue with Dough 2, and then Dough 1 if there are still any remainders.
After completing this layer making process, steam the entire dough for 25 minutes until it is done.
The luscious carrot cake is ready to be served.

Recipes For a Variety of Old Fashion Breads - Johnny Cakes, Buttermilk Biscuits, and Hot Rolls

Yes, you can go home again. Well, sort of anyway. With these recipes you just may be able to recreate some of the delicious breads you remember from Grandma's and Mom's. Remember Johnny Cakes? Now you can make your own with this simple old-fashion recipe. Do You prefer those delicious big ole buttermilk biscuits? You can do that, too, using this recipe for Wilma's Favorite Buttermilk Biscuits. Or perhaps you prefer hot rolls. Bet you've never tried this recipe for Jiffy Cake Mix Hot Rolls!

JOHNNY CAKES

1/2 cup cornmeal
1 tbsp flour
1 tbsp soda
1 1/2 cups milk
1 tsp salt
2 tbsp vegetable oil
2 eggs, beaten

Mix all ingredients together using only enough strokes to mix well. Drop by spoonfuls on hot griddle. Fry until brown on each side.

WILMA'S FAVORITE BUTTERMILK BISCUITS
This is another old Southern Indiana recipe.

2 cups all-purpose flour
3/4 tsp salt
1 tbsp baking powder
1/4 cup lard (or shortening)
1 cup buttermilk
1/4 tsp baking soda

Sift the flour, salt, and baking powder together into a large bowl. Work the lard into the flour mixture using your fingers. Mix the baking soda into the buttermilk and add to the flour mixture; blend lightly. Knead and roll out to 1/2-inch thick on a lightly floured surface. Using a biscuit cutter or the lip of a glass cut the dough. Bake on a greased baking pan (or even better, a cast iron skillet).

NOTE: Do not over knead the dough. The less you knead, the better the biscuits.

JIFFY CAKE MIX HOT ROLLS

1 box Jiffy brand white cake mix
1 pkg dry yeast
1 1/4 cups warm water
3 cups flour

Mix all the ingredients together in a large bowl. Set in a warm place and let rise until double in size. Punch down and shape into rolls. Dip into vegetable oil and let rise again. Put into greased muffin cups or arrange in a pan. Bake at 375 degrees until browned. Enjoy!

Old Fashion Pie Recipes - Impossible Coconut, Sugar, and Apple-Pecan

Love those old-fashion pies that were always at grandma's house! One of the best things about visiting my grandmother's old-fashion kitchen with it's huge old metal wood cookstove was the wonderful baked goods sitting on the warmer. Her biscuits and pies were unbeatable. If you want to revisit grandma's kitchen in your own house, here are three old recipes to get you going. Dora's Impossible Coconut Pie bakes into its' own crust. Mama Harvick's Sugar Pie is just the plain old sugar pie so famous in the olden days. And the Apple-Pecan Pie blends two of our favorites into one.

DORA'S IMPOSSIBLE COCONUT PIE

4 eggs

1/2 cup oleo

1 cup white sugar

1/2 cup flour

1/2 tsp salt

1/2 tsp baking powder

2 cups milk

1 cup coconut

1 tsp vanilla

Preheat oven to 350 degrees.

Place all the ingredients in a blender, one at a time. Blend until all mixed together. Pour mixture into a buttered 10-inch pie pan. Bake at 350 degrees for one hour. When done, the crust will be on the bottom.

APPLE PECAN PIE

This recipe is from an old newspaper clipping.

Sprinkle 1/4 cup chopped pecans on a unbaked 9-inch pie shell.

Mix together:

1 cup sugar

1 tbsp flour

1/4 tsp nutmeg

1/2 tsp cinnamon

5 to 6 cups apples, peeled, sliced or chopped--your preference

Place mixture over pecans in the pie shell. Dot with 2 tablespoons of butter. Top with the following crumb mixture:

1/2 cup brown sugar

1/4 cup butter

1/3 cup flour

1/4 tsp cinnamon

1/4 cup chopped pecans

Bake at 425 degrees for 45 minutes or until apples are tender.

MAMA HARVICK'S SUGAR PIE

I received this recipe from a dear friend. It is an old recipe in her family.

1 1/4 cups sugar

1 1/4 cups milk

3 tbsp flour

1 tsp vanilla

4 or 5 thin pats of butter

1 unbaked pie shell

Mix sugar and flour; add milk and vanilla. Pour into unbaked pie shell. Bake about 40 minutes in a 350 degree oven. Put pats of butter on top of liquid before putting in oven.

Valentine Cakes For Beginners

Most everyone likes to eat cakes. This is an easy recipe. Start with a boxed mix, and mix as directed. You may wish to add any of your favorite flavorings, or things such as coconut, cinnamon, etc. Bake the cake according to the box instructions, or the directions in a cookbook. You can make homemade icing by using 3/4 bag of powdered sugar, 2/3 cup solid white shortening, and milk as a last ingredient. Add the milk a little at a time after you put the first two ingredients in a mixing bowl. Keep adding milk, stopping when the icing is the consistency you like for putting on a cake. Use food coloring dyes to make separate colors of icing. You may want to use icing from the supermarket, and keep in mind that you can add chopped nuts, coconut or other things to this type of icing too.

After the cake is iced, you can decorate it. You may wish to purchase a professional cake decorating set with different tips to make leaves, flowers or words. Try to place the icing as far down inside the bag as possible, and push it down with a spoon. Then fold the end over and over until the icing starts to come out of the decorative tip. If you are going to use different colors of icing, mix the colors separately in different bowls. Make the decorations you want on the cake. When you are finished with the decorating bag, push all of the icing you can out through the tip. Take the pieces connected to the bag apart, and let them soak in warm water for a few minutes to aid in easy cleaning.

You may want to buy cake decorations such as candied hearts, or use miniatures such as plastic horses, tractors, or some other item. Make sure the item will not dissolve on the cake icing, and do not use items on the cake unless you know for sure they are safe to use around food.

Anyone can decorate a cake. Even you!

Coconut Cake Recipes

Coconut cakes taste delicious and they are actually more simple to make than you might think. Below are 3 coconut cake recipes with frosting and glazes that are easy to prepare. Try one or all three.

Coconut Cake Recipe 1

Ingredients:
1 package yellow cake mix
1 (4 serving size) package vanilla instant pudding mix
1 1/2 cups water
4 eggs
1/4 cup oil
2 cups flake coconut
1 cup chopped walnut pieces

Directions:
Blend cake mix, pudding mix, water, eggs and oil together. Beat at medium speed for 4 minutes. Stir in coconut and nuts. Pour into 3 greased and floured 9 inch pans. Bake at 350 degrees for 35 minutes. Cool in pans for 15 minutes, then remove from pans. Frost cake when cooled completely.

Frosting

Ingredients:
4 tablespoons margarine
2 cups coconut
1 (8 ounce) package cream cheese
2 teaspoons milk
3 1/2 cups sifted powdered sugar
1 teaspoon vanilla

Directions:
Melt 2 tablespoons margarine in a skillet and add coconut. Cook on low heat and stir constantly until coconut is golden brown. Spread coconut on paper towels to cool. Cream 2 tablespoons butter with cream cheese. Alternate adding milk and sugar; beat well. Add vanilla and stir in 1 3/4 cups coconut. Spread on layers and top of cooled cake. Sprinkle with remaining coconut.

Coconut Cake Recipe 2

Ingredients:
1/2 cup shortening
1/4 teaspoon salt
1 1/2 teaspoons baking powder
5 eggs
2 cups flour
2 cups sugar
1 can flaked coconut
1/2 cup margarine
1/2 cup milk
1 teaspoon coconut flavoring

Directions:
Mix all ingredients together and bake in a greased and floured tube cake pan at 325 degrees for 1 hour or until done.

Glaze

Ingredients:
1 cup sugar
1 teaspoon coconut flavoring
1/2 cup water

Directions:
Boil ingredients together for 1 minute and pour over hot cake while it is still in the pan.

Coconut Pound Cake

Ingredients:
2 cups sugar
1 cup shortening
5 eggs
2 cups self rising flour
1 cup buttermilk
1 1/2 teaspoons coconut flavoring
1 cup flaked coconut

Directions:
Cream sugar and shortening together, then add eggs, beating mixture after each egg. Alternately add in flour and buttermilk. Add coconut flavoring and coconut. Pour into a well greased and floured tube pan and line bottom of tube pan with waxed paper cut 1 inch larger than pan bottom. Bake for 1 hour and 15 minutes at 325 degrees.

Glaze

Ingredients:
1 cup sugar
1/2 cup water
1 1/2 teaspoons coconut flavoring

Directions:
Combine all ingredients and bring to a boil. Pour over warm cake and let cake cool in pan.

Indian Shrimp Curry Recipe - Simple, Delicious, and Perfect

If you love curry as much as I do, then you must know that there are few meals that can satisfy your palate as an Indian shrimp curry recipe. Coconut Cream Pound Cake Recipe

Ingredients

225 g softened butter
224 g softened cream cheese
600 g white sugar
Half a dozen eggs
5 ml coconut extract
375 g all-purpose flour
2 g baking powder
150 g coconut flakes
Baking Instructions

Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch tube pan.

Cream the butter and cream cheese until thoroughly blended. Add sugar and whisk to light fluffy texture. Add 1 egg at a time and whisk followed by coconut extract. Pour flour and baking powder in until lightly moistened, then the coconut. Mix is ready for the baking pan.

Bake for 1 hour and 20 minutes. Allow to cool for 10 minutes before moving.

Another cake simple to make and goes down well with wedding guest and their gullets to is the (Easy Light Fruitcake.)

Ingredients
455 g candied cherries, halved
5 candied pineapple rings, finely minced
870 g golden raisins
360 g candied mixed fruit peel
170 g almonds
125 g all-purpose flour
455 g softened butter or margarine
400 g white sugar
Half a dozen eggs
5 ml vanilla extract
60 ml orange juice
625 g all-purpose flour
9 g baking powder
3 g salt
6 split almonds
Baking Instructions

1. Preheat oven to 275 degrees F (135 degrees C). Line the bottom and sides of two greased 9 x 5 x 3 inch loaf pans, and 1 round 4 1/2 inch x 3 inch deep pan with brown paper. Grease the paper.

2. Mix cherries, minced pineapple pieces, raisins, mixed peel, 1 cup pecans, and 1 cup flour in a basin. Blend all ingredients until fully coated with flour and stand to aside

3. Using a separate bowl, cream the butter/margarine and sugar. Whisk in 1 egg at a time. Add orange juice and vanilla and stir. Take 5 cups flour, your baking powder and salt and add to creamy mixture. Add floured fruit and nuts. Carefully pour mix into baking pans. Fill each pan 3/4 full. Add split almonds over the top.

4. Usual baking time 3 hours. Pierce cake with a toothpick and if done the toothpick comes out clean. If the top of your cake darkens before the sides cover with foil.

My suggestion: plain sponge. Nearly every cake base is sponge mix. If a person says they don't like a particular cake, it means they're not fond of certain ingredients used to fancy up and flavor. Keeping it plain allowing your guest to choose their own fillings, is the key. Fill glass bowls with a variety of flavored fillings (chocolate sauce, custard, jelly, and butter cream, raisins, mixed fruit, syrup, treacle and different flavored jams and fruit sauces? Do this and your guests won't have to wait for you to turn your back before spitting out cake chosen by you.

Victoria Sandwich Cake, Madeleine, Banana Cake, and Dropped Scones Recipes

Victoria Sandwich Cake Recipe

Ingredients:-
4 oz. flour
½ teaspoon baking powder
1 teaspoon vanilla
½ tablespoon raspberry jam
4 oz. margarine or butter
4 oz. castor sugar
2 large eggs or 3 small eggs

Methods:-
1. Line and grease two 7" sandwich tins.
2. Cream the fat and sugar till light and fluffy.
3. Beat up the eggs one at a time and add it gradually to the creamed mixture, beating it well in.
4. Beat in the vanilla.
5. Fold in the flour sieved with baking powder.
6. Turn the mixture into the prepared tins and spread it out evenly hollowing it slightly in the center.
7. Bake it in a moderately hot oven, at 375°F for about 25 minutes.
8. Turn the cakes out to cool on a wire tray.
9. When cooled, spread raspberry jam on each and sandwich them together.
10. Sprinkle the top with castor sugar and serve it on a doily.

Madeleine Recipe

Ingredients:-
3 oz. flour
¼ teaspoon baking powder
½ teaspoon vanilla
2 to 3 tablespoons desiccated coconut
2 oz. margarine or butter
2 oz. castor sugar
1 big egg
1 tablespoon raspberry jam
4 glace cherries

Methods:-
1. Grease 7 dariole moulds
2. Cream the fat and sugar and add the beaten eggs gradually to it.
3. Beat in the vanilla and fold in the flour which has been sieved with the baking powder.
4. Put equal amounts of the mixture into the greased mould and bake them in a hot oven at 400°F for about 20 to 25 minutes.
5. Turn them out to cool.
6. Warm the jam by standing it in hot water to melt it.
7. Brush the cakes with melted jam and roll them in desiccated coconut.
8. Stand each cake in a paper cup and decorate each with ½ a cherry on top.

Banana Cake Recipe
Ingredients:-
4 oz. flour
½ teaspoon baking powder
½ teaspoon bicarbonate of soda
1 tablespoon milk
1 teaspoon lime juice
3 oz. margarine or butter
3 oz. castor sugar
1 big egg
3 to 4 ripe bananas

Methods:-
1. Line a 6" round cake tin or grease and flour an 8" ring mould.
2. Cream the fat and sugar and add the beaten egg gradually and beat well.
3. Mash the bananas with a fork to get ½ cup mashed bananas.
4. Add the lime juice to the milk. Then add the milk and mashed bananas to the creamed mixture and mix well.
5. Fold in the flour which has been sieved with the baking powder and bicarbonate of soda.
6. Turn the mixture into the prepared tin and bake it in a moderately hot oven at 375°F for about 1 hour.
7. Coll the cake on a wire tray and serve it on doily.

Dropped Scones Recipe

Ingredients:-
4 oz. flour
½ teaspoon cream of tartar
¼ teaspoon bicarbonate of soda
1 egg
1 oz. margarine
1 oz. castor sugar
¼ pint milk (sour if possible)

Methods:-
1. Sieve the flour, cream of tartar and bicarbonate of soda together into a bowl.
2. Rub in the margarine and add the sugar. Mix well.
3. Make a well in the flour and add in the egg and the sour milk.
4. Mix quickly into a thick batter. Do not beat the batter.
5. Heat up a greased frying pan or the grill plate of an electric oven.
6. Drop a tablespoon of the mixture at a time on the hot pan and let it cook till bubbles rise and burst.
7. Turn over to cook and brown the other side.
8. When cooked, put the dropped scones between a clean folded towel to keep them moist and warm.
9. Serve hot dropped scones with butter and jam served immediately.

Note:- A batter for dropped scones should be slightly lumpy and not smooth. After greasing the pan the first time, it is not necessary to grease it again. An over greased pan will not give the dropped scones a smooth and evenly browned surface.

Hawaiian Coconut Haupia

Haupia is a Hawaiian jello-like dessert made of coconut. Real easy to make and real good to eat. Enjoy! Ingredients: 6 tbsp granulated sugar 6 tsps corn starch 1 1/2 cups milk 1 1/2 cups coconut milk Mix all ingredients together. (In the video I blend them in a blender but later found it was not necessary to do so. Simply mixing all the ingredients with a wisk is sufficient.) Pour mixture into a medium size pot. Place on high until it starts to bubble or till steams then reduce to medium or medium high. Continue to stir until mixture thickens. Place in cake pan or whatever dish you desire. Cool in refrigerator for at least an hour or until you get hungry. haha

Health Benefits of Coconut Cream

Isn't coconut cream the culprit that causes weight gain and triggers heart disease? In fact, the health benefits of coconut cream are more than what you've heard and learned for the past decades. So how does this wrongly-accused cream promote health?

There are two things every Italian loves, family and good food.

This was an order for a little girls birthday. She's turning 7 and she love love loooooves Hello Kitty. I delivered the cake and cupcakes to her the night before the party (which is being held today - Saturday June 12th) and she was so surprised and love it! Her Mum even asked me to be in a photo with her little girl and the cake. Both the cake, and the cupcakes were vanilla cake. The figurine was made by hand out of fondant, not gum-paste, I made it the night before I delivered it and it dried nicely. The battery on my digital camera died right at the end! ha ha lucky!

80g (2 1/2 oz) white eating chocolate, chopped coarsely
1 cup caster sugar
1/2 cup milk
1/2 cup plain flour
1/2 cup self raising flour
1 beaten egg
100g (3 1/2 oz) frozen raspberries

Preheat oven to 170oC (325oF). Line a 12 hole muffin pan with paper cases. Stir butter, chocolate, sugar and milk in small saucepan over low heat until smooth. Transfer mixture to a medium bowl and allow to cool, about 15 minutes. Whisk sifted flours into chocolate mixture. Add egg then fold in raspberries. Divide cake mixture among patty cases and bake for about 30 minutes or until cooked. Allow to cool in pan for 5 minutes before turning out onto a wire rack to cool.

Ice with white chocolate ganache. To make ganache bring 1/2 cup cream to the boil in a small saucepan then remove from heat. When bubbles subside add 360g (11 1/2 oz) coarsely chopped white eating chocolate. Stir until smooth. Spread on cooled cake.

Banana Cupcakes with Passion Fruit Icing

125g (4 oz) butter at room temperature, chopped
3/4 cup firmly packed brown sugar
2 eggs
2 cups self raising flour
1 teaspoon mixed spice
1 cup mashed banana (about 3 bananas)
3/4 cup sour cream
1 tablespoon milk

Preheat oven to 170oC (325oF). Line two 12 hole muffin pans with paper cases. In a large bowl, using an electric beater, cream butter and sugar together until light and fluffy. Add eggs one at a time, beating well after each addition. Sift flour and spice together. Fold into creamed mixture with banana, sour cream and milk. Spoon mixture into paper cases until two thirds full. Bake for 25 minutes or until cakes are cooked when tested. Cool in tin for 5 minutes then transfer to a wire rack. When cool ice with passion fruit icing.

Passion fruit icing

In a medium heatproof bowl combine 1 1/2 cups icing sugar, 1 teaspoon soft butter and 2 tablespoons passion fruit pulp. Place over a pan of simmering water and stir until smooth and spreadable. Spread over cooled cakes.

Carrot and Orange Cupcakes with Mascarpone Frosting

8 tablespoons softened butter
1/2 cup firmly packed brown sugar
Juice and finely grated rind of 1 orange
2 eggs, lightly beaten
175g (6 oz) grated carrots
1/4 cup coarsely chopped walnut pieces
1 cup plain flour
1 tsp ground pumpkin pie spice
1 1/2 teaspoon baking powder

Preheat oven to 180oC (350oF). Line a 12 hole muffin pan with muffin paper cases. Beat together the butter, sugar and orange rind until light and fluffy. Gradually add the eggs, beating well after each addition. Squeeze any excess liquid from the carrots and add to the mixture with the walnuts and orange juice until combined. Fold in the sifted flour and pumpkin pie spice. Spoon mixture into paper cases until 2/3 full. Bake for 25 minutes or until cooked. Transfer to a wire rack and allow to cool. Ice with mascarpone frosting.

To make mascarpone frosting put 1 1/4 cups mascarpone cheese, 4 tablespoons icing sugar and grated rind of 1 orange in a large bowl and beat together until smooth and creamy. When cupcakes are cooled spread frosting on each cake. Store in refrigerator until ready to serve.

Johnny Cakes

Belizean food is easy to prepare, physically filling and delightfully delicious.  How about a dish of Johnny Cakes - a cross between what the American people traditionally or culturally know as biscuits and/or pancakes and traditionally a favored  food item breakfast dish in Belize.    However, Johnny Cakes are also, for many people, a standard, even a favorite bread that is consumed during lunch and dinner meals.  They are excellent with refried beans, cheese that is melted, crumbled or sliced.   A cultural Belizean food indeed; seldom is a meal eaten in a Belizean home without Johnny Cakes!

JOHNNY CAKES

2 lbs. Flour 1/4 lb. Shortening 4 tsp. Baking powder 2 tsp. Salt Cream from 1 coconut, or 1 tin Coconut Cream (8 oz.)

Method: Place flour in mixing bowl and add all dry ingredients. Work in shortening with fingers. Gradually add coconut cream and mix until dough handle easily without being too sticky, or dry. If too sticky, add a bit more flour. Knead until smooth. Cut into desired size (golf ball size works well) and shape into a ball. Let rest about 10 minutes, then flatten to about 1/2" thickness onto baking sheet. Prick top with fork four or five times.

Bake in preheated oven at 450 degrees F. until golden brown, or about 15 minutes. Once cooked split open and butter while hot.

Johnny Cakes are also good for when one has the munchies, pop one in the microwave or eat it cold, like bread and butter spread a bit of jam, jelly or your favorite fruit preserve on top. How delicious!

The Basics of Cooking Polynesian Dishes With Coconut

If you visit Hawaii, or indeed any Polynesian island, you are sure to notice that coconut finds its way into many dishes. In fact, coconut composes up to half of the typical diet in some areas of Polynesia. This fruit grows on the ubiquitous palm tree, which can be spotted on nearly every island in this area of the world. It is grown both for decoration and for its many delicious uses in both sweet and savory dishes. If you're planning a luau party or simply love the delicious flavors of Hawaii, start cooking with fresh coconut.

Nearly every part of the coconut fruit has some culinary use. The white fleshy part, or meat, is used in a wide range of traditional Polynesian dishes. The coconut water, found in the central cavity of the coconut, is a highly nutritious and refreshing drink. When grated coconut meat is processed with water or milk, the result is coconut milk or coconut cream. This can be further processed into coconut oil. The oil of the coconut is frequently used for cooking (especially frying at high temperatures), making margarine, and even in beauty products.

Coconut can be found in a wide variety of dishes originating from Polynesia. For example, grated coconut can be added to soups or stews, or sprinkled on top of cakes and other desserts. Coconut cream can be used as a thickener, though its most well-known use is in the pina colada, a tropical drink made with rum and pineapple.

In Tahiti, one of the most popular dishes is Poisson Cru, a mixture of raw fish marinated in lime juice and coconut milk. Another popular meat dish using coconut is Papaya Chicken, a mixture of coconut milk, papaya, and chicken. Mahi, a flaky white fish, is one of the most popular seafood dishes in Hawaii, and it is used in numerous recipes using coconut milk. For dessert, try Faraoa coco (coconut bread) or Poe, a taro root pudding flavored with banana, vanilla, or papaya and topped with coconut milk.

If you want to start using fresh coconut in your cooking, you might be unsure where to begin, as it's not found in many American dishes. The thick outer shell makes coconuts somewhat tricky to open. While monkeys open them by throwing them at rocks, the best way is to use an ice pick or screwdriver to pierce the eyes, which allows you to drain the liquid. Then, cook the coconut in the oven for about twenty minutes, followed by wrapping it in a towel and hitting it with a hammer to get it to open.

If your Polynesian recipe calls for grated coconut, one coconut produces between three and four cups of grated flesh, which can be stored in the refrigerator for a few days before use. If it's coconut milk you're after, mix a cups of loosely packed, grated coconut with a cup and a half of water from the coconut, found in the central cavity. Then heat it and strain it to produce coconut milk for your recipe. This process can also be done with a blender. The finished coconut milk can be used in a variety of both sweet and savory dishes at your next tiki party.

Quick Christmas Cookie Recipes - Lemon Snowflake Cookies

A deliciously light and flavorful cookie.

1 (18 1/4 oz.) pkg. lemon pudding cake mix

2 1/4 cups frozen whipped topping, thawed

1 egg

Confectioners' sugar

Directions

Preheat oven to 350 degrees.

In a bowl, combine cake mix, whipped topping and egg. Beat with mixer on medium speed until well blended. Batter will be very sticky.

Drop by teaspoonfuls into confectioners' sugar and roll lightly to completely coat.

Place cookies onto ungreased baking sheets. Bake for 10 to12 minutes or until lightly browned. Remove from pan and let cool.

Makes 60 to 72 cookies.

Before serving, roll the cookies into confectioners' sugar again, if desired.

Makes 66 cookies.

Prepare baking sheets with nonstick cooking spray.

In a bowl, combine the cake mix, egg and the whipped topping; mix until well combined.

Place confectioners' sugar into a shallow dish.

Drop dough by tablespoonfuls into sugar; roll until coated completely.

Place cookie balls onto prepared baking sheets. Bake for 10 to 12 minutes or until lightly browned around the edges. Let cool.

Makes 60 cookies.

1/2 cup butter

In a large saucepan, heat the butter, milk and sugar; bring to a boil, stirring occasionally. Boil for 1 minute. Remove from heat.

Stir in the oats, cocoa and raisins, nuts or coconut. Drop by the tablespoonful onto waxed paper. Cool.

Makes 36 cookies.

A Taste of Jamaican Food and Recipes

The flavors of Jamaica are the product of the island's history combined with a verdant, lush climate. The Spanish, British, African and East Indian have all had an influence over what is today a unique island cuisine made colorful by the many tropical fruits that thrive here.

The waters off Jamaica have always teemed with fish and seafood is the primary protein source for islanders. Snapper, grouper, sea bass and other reef a deep sea fish are caught daily by the many fishermen whose boats line the beaches. Spiny lobster, shrimp and freshwater crustaceans are readily available and cooked usually in a thick sauce. Chicken and goats are well suited to the small mountainous island and are kept by many families but cattle are rare and beef is not the predominant meat.

Many of Jamaica's fruits, including pineapple, mango, banana and avocado were brought to the region by slave traders and plantation owners experimenting with crops. What were once sugar cane fields are now being used to grow fruits and ackee for export and domestic use.

Few other cuisines mix such a range of spices and tastes - sweet, hot and savory - as Jamaican cooking. Jamaican food wouldn't be the same without the spices, seasonings and colors from: Allspice, the pimento berry.

Among many of the spices grown in Jamaica are nutmeg, ginger, thyme, scotch bonnet peppers, which are integral distinct flavors of Jamaican cooking. The pungent thyme grows rampantly on the island and is found in the majority of Jamaican foods.

Favourite Jamaican foods are those for coconut cake, rum punch & beef jerky recipies.

Real Jamaican food, when cooked with feeling, is a soul-satisfying experience.

Unlock the Coconut - Miami Coconut Milk Recipe

At the market, choose a coconut that sloshes when you shake it; if you don't hear anything, it may be dried out. To open the coconut, pierce three dark-colored eyes at the top of the nut with a screwdriver or an ice pick. Pour out the liquid inside; reserve to serve as a beverage, if desired. Place the drained coconut on a rimmed baking sheet in a 350*F oven for about 15 minutes, or just until the shell begins to crack. Let cool briefly, then place on a study surface. Using a hammer or mallet, hit hard along the crack; the coconut should then break into pieces.

Pry white coconut flesh from shell with a screwdriver or knife with a rounded end. Pare off brown skin with a small knife or vegetable peeler. You may grate the coconut to use in fruit salads, baked gods, or confections, or as a condiment to serve with curries. You can also cube it to make fresh coconut milk, often called for in Asian and tropical dishes. The following recipe will help you do just that.

Miami Coconut Milk

cut fresh coconut into 1/2-inch chunks

for each cup of coconut chunks, measure 1 cup hot water

1. Whirl together in a blender or food processor until mixture is thick and pulpy (about 20 to 30 seconds).

2. Let steep for 30 minutes.

3. Strain through a double thickness of cheesecloth, squeezing out liquid; discard coconut.

4. Cover and refrigerate "milk" for up to 3 days; or freeze for longer storage.

5. One cup each coconut and hot water makes about 1 cup coconut milk

French cottony amber pie + Vanilla dent cake

Vanilla wafer cake Chris Kimball, Cook's Country Best Lost Suppers Serves 12 INGREDIENTS 1 pound (7 cups) vanilla wafer cookies, broken into rough pieces 1/4 teaspoon salt 1 1/4 cups sugar 12 tablespoons (1 1/2 sticks) unsalted butter, softened 6 large eggs 1/2 cup whole milk 2 cups sweetened shredded coconut 1 cup pecans, toasted and chopped DIRECTIONS Adjust an oven rack to the middle position and heat the oven to 300 degrees. Grease a 9-inch springform pan and set aside. Process half of the cookies in a food processor to fine crumbs, about 1 minute. Transfer the crumbs to a bowl. Repeat with the remaining cookies. Stir in the salt and set aside. In a large bowl, beat the sugar and butter together with an electric mixer on medium-high speed until light and fluffy, 3 to 6 minutes. Beat in the eggs, one at a time, until incorporated, scraping down the bowl and beaters as needed. Reduce the mixer speed to low and add one-third of the cookie crumbs followed by 1/4 cup of the milk. Repeat with half of the remaining cookie crumbs and the remaining 1/4 cup milk, and finish with the remaining cookie crumbs. Fold in the coconut and pecans. Give the batter a final stir with a rubber spatula to make sure it is thoroughly combined. Scrape the batter into the prepared pan, smooth the top, and gently tap the pan on the counter to settle the batter. Bake until the cake is golden brown and a toothpick inserted in the center comes out with a few moist crumbs attached, 1 hour 20 minutes ...

Coconut water is mildly sweet, helping eliminate the need for artificial sweeteners. It's also healthy and invokes visions of a tropical paradise, setting a fun and relaxing mood. Coconut water is packed with potassium and vitamin C, in addition to having many other health benefits, that include, helping with your circulation, strengthening your immune system, clearing your skin, and detoxifying your body.

Choco Coffee Mountain Shaved Ice Recipe

For this recipe, you're going to want to brew about two to three cups of coffee with coconut water. Coconut water is mildly sweet and will be undetectable in your coffee machine after a couple of uses.

Add and mix in chocolate syrup until it dissolves in the hot coffee. When it comes to room temperature, freeze this coffee in the containers for your ice shaver.

After you shave the ice, top this sweet, chocolaty coffee treat with chocolate syrup, thin sliced candied almonds, crumbled white chocolate Oreo Hershey's, thin sliced banana and a dollop of whip cream on top. While we're at it, try adding some all natural, unsalted peanut butter in there someplace.

Nobody ever thunk it, but there it is, shaved ice taken to the next level. The next two aren't quite as complicated, but nevertheless, classics that you and your kids will love!

Sweet Milk and Fruit Medley Shaved Ice Recipe

This recipe takes me back to my childhood. I remember the fruit medley cups from my lunchbox in pre-school and then in every school cafeteria from elementary school and on. LOL, fruit medley was one of the only things besides pizza and chocolate milk that I'd eat or drink from those cafeterias. Ahhhh, the memories.

Obviously, we'll need the shaved ice machine and our pre-frozen blocks of coconut water.

Once the ice is all shaved up, drizzle some sweet condensed milk over the top, and top it with canned fruit medley. And, how about some extra condensed milk for good measure?

This one's an old school classic, enjoy!!!

Red Bean and Ice - Shaved Ice Recipe

In addition to consuming lots of shaved ice while I lived in Hawaii, my childhood consisted of many trips to "J-town," as my family would call it, or Little Tokyo, in Los Angeles. From the time I was a little kid, I can remember the hole in the wall restaurant, with a little street food booth in the front, that serves red bean ice. I'm on the cusp of my 31st birthday and still go to the same place, today.

I love this recipe, and it's a cultural treat, so I though I would share it.

You're gonna want the warm red beans, that are nice and sweet, with all the juices reduced down. You can buy these beans already prepared at any Japanese market. Serve the warm red beans in a small bowl or cup and cover them with a layer of shaved ice about one inch thick and drizzle the top with sweet condensed milk.

Ahh, so simple, but so good. This one is actually pretty healthy because, not only do you have the coconut water, you have all the nutrients from the red beans as well.

How to Make an Easter Bunny Cake

Making an Easter Bunny Cake

For many years, chocolate has had the poor reputation of being "bad for you." But researchers have now discovered that chocolate contains as many if not more antioxidants than tea.

To make this double-chocolate Easter bunny cake (chocolate cake and chocolate frosting), use your round layer-cake pan.
In addition to the cake and frosting, you will need:

* jelly beans

* coconut

* malted milk eggs (the large ones that come in a variety of colors)

* 2 wafer cookies (for the ears)

Cake

* 1 1/2 cups flour

* 1 cup sugar

* 1 teaspoon baking powder

* 1/2 teaspoon salt

* 1/3 cup cocoa

* 3/4 cup milk

* 1/2 cup cooking oil

* 1 egg

* 1 teaspoon vanilla

Measure all ingredients into a medium-sized bowl. Use an electric mixer and blend at low speed for 1 minute. Scrape the bowl while blending. Beat at high speed for 2 to 3 minutes, scraping the bowl occasionally. Bake at 350 degrees for 35 to 40 minutes in a greased and floured round layer-cake pan. Allow the cake to cool thoroughly before removing it from the pan.

Frosting

* 3 cups powdered sugar

* 1/4 cup plus 1 tablespoon cocoa

* 6 tablespoons butter, softened (or margarine, if you prefer)

* 1/4 cup milk

Measure all ingredients into a medium-sized mixing bowl. Blend at low speed for 1 minute. Scrape the bowl while blending. Beat at high speed for 2 to 3 minutes, scraping occasionally. If frosting seems too stiff, add milk by the teaspoon until the frosting reaches the desired consistency. If the frosting seems too thin, add powdered sugar by the tablespoon until the frosting reaches the desired consistency.

How to Make Your Chocolate Easter Bunny Cake

Remove the cake from the round cake pan. Cut in half. Frost the flat side of one half and put the two pieces together. Place on a platter or a large plate, cut side down.

Frost the cake with chocolate frosting.

Place two jelly beans for the eyes and one jelly bean for the nose. Use a large malted milk egg for the tail.

With a sharp knife, cut a hole on each side of the head where you want to place the ears. To make the ears, use the sharp knife to trim a wafer cookie into the shape of bunny ears. Frost the ears. Put a little frosting into the holes to anchor the ears.

Sprinkle coconut around the Easter bunny cake. Decorate with jelly beans and malted milk eggs.
