A Glossary of Typical Thai Dishes - Part I

Planning to eat at a Thai restaurant can be a challenge sometimes, especially the first time one tries Thai food. Looking up dishes on the Internet ahead of time is always a good idea. The Internet is filled with lots of information on both authentic Thai dishes and Thai dishes customized for one's country. So, when choosing your Thai dishes, be aware that they might not be the same as a given description on the Internet. Even authentic Thai recipes for a given dish can be different. This is because it depends on the person who wrote the recipe. The region plays important role. Green curry in the north can be different from green curry in the central plains. A variety of factors make recipes and descriptions a fluid process. But that there are benefits to this situation. Becoming familiar with multiple perspectives and possibilities can enliven one's eating experience further and help generate new ideas and tastes.

Most Thai restaurants in the US will provide menus that include descriptions of each dish. Some may also show dishes written in Thai and/or a phonetic English pronunciation of the Thai name. The names of dishes often derive from from the main ingredient. For instance, Kaeng Kiaw Wann Gai translates literally as "curry, green, sweet, chicken." Here are some typical Thai dishes in Thailand. Perhaps you'll find some dishes here that you've tried or would like to look for in restaurants in your country.

Snacks (Appetizers)
Thais love snacks and often eat between meals. There are a wide variety of snacks ranging from deep-fried insects to fruits and sweets.


Gai Ping: charcoal-grilled chicken with sticky rice
Kai Ping: charcoal-roasted eggs with dark chili dipping sauce
Khanom Pang Nah Goong: deep-fried minced shrimp, garlic and cilantro on bread
Khanom Pang Nah Moo: deep-fried minced pork, garlic and cilantro on bread
Kiaw Krob Goong-Moo: deep-fried minced pork, shrimp & spices enclosed in a wonton wrapper
Kluay Ping: charcoal-grilled banana
Luk Chin Ping: barbeque meatballs with chili dipping sauce
Luk Chin Tod: deep-fried meatballs with chili dipping sauce
Miang Kam: leaf-wrapped tidbits
Moo Ping: charcoal-grilled pork with sticky rice
Po Pia Tod: deep-fried spring rolls with sweet dipping sauce
Roti: Muslim pan-fried bread with sweetened condensed milk and granulated sugar
Roti Sai Mai: flour-wrapped spun candy
Sakoo Sai Moo: steamed tapioca filled with minced pork
Tod Mun Goong: fried shrimp cakes with cucumber and peanut in sweet dipping sauce
Tod Mun Pla: fried fish cakes with cucumber and peanut in sweet dipping sauce

Noodle Dishes
There are many types of noodles - three examples of types are egg, rice and transparent noodles. The rice noodles come in 3 different sizes: sen yai (wide), sen lek (medium) and sen mee (thin). Egg noodles are called "Ba-Mi" and transparent are called "Wun sen" and are made from mung beans starch. Most Thais would eat noodle dishes with chopsticks as contrasted with their regular use of spoon and fork.


Bami Haeng: egg noodles (served dry) with vegetables and meat/meatballs (pork, chicken, beef or fish balls)
Bami Kiaw Nam: egg noodle soup with wontons (filled with meat), sliced barbeque pork and vegetables
Bami Kiaw Haeng: egg noodles (served dry) with wontons (filled with meat), sliced barbeque pork and vegetables
Bami Nam: egg noodle soup with vegetables and meatballs (pork, chicken, beef or fish balls)
Khamon Hua Phak Kad: stir-fried white radish cake with bean sprouts and Chinese chives
Khao Soi: Chiang Mai-style noodles; creamy sauce served over egg noodles
Kuai Tiaw Kai Kau: stir-fired wide rice noodles with chicken
Kuay Tiaw Haeng: rice noodles (served dry) with vegetables and meat/meatballs (pork, chicken, beef or fish balls)
Kuay Tiaw Num: rice noodle soup with vegetables and meatballs (pork, chicken, beef or fish balls)
Lad Nah: stir-fried thin or wide rice noodles with light gravy bean sauce and Chinese kale
Pad Kee Mao: Stir-fried wide rice noodles with meat and vegetables with chilies
Pad See Eew: stir-fried wide rice noodles with meat and vegetables with black soy sauce
Pad Thai: stir-fried medium rice noodles with egg, dried shrimp and fried bean curd sprinkled with peanuts (served with
beansprouts)

Curry Dishes
Thai curry dishes are well known for their spicy qualities. Each curry dish is made with a specific type of curry paste; the term can also refer to the pastes themselves. There are two common types of curries: coconut-based curry and water-based curry. The coconut-based curry will consistently have coconut milk in it whereas water-based curry has no coconut. Most water-based curry will involve fish as one of its ingredients. Here are some typical curry dishes Thais eat:


Kaeng Daeng: red curry with meat, red bell peppers, basil and coconut milk
Kaeng Hang Le: Northern style curry with meat, curry powder, lemongrass, ginger, shallots, shrimp paste, chilies and peanuts
Kaeng Kari: Indian style curry with meat, potatoes and coconut milk
Kaeng Kiaw Waan: a slightly sweet green curry with meat, Thai eggplants, pea eggplants, winter melon, Thai sweet basil (Bai Horapa), kaffir lime leaves and coconut milk
Kaeng Khua: three-flavored coconut-based curry (sweet, sour and salty) most common meat is fish, shrimp or clam. Main added ingredients typically used in this curry can be pineapple, mushrooms or winter melon. Other ingredients are galanga, kaffir lime zest, dried chilies, lemon grass and shrimp paste
Kaeng Leung: hot yellow curry, most common meat used is fish. Other ingredients are winter melon, chilies, garlic, turmeric, lemon grass, shallots and shrimp paste
Kaeng Liang: vegetarian curry, most common vegetables are sponge gourd (buab liam), gourd leave (bai tam leung) and phak nam tao (bottle gourd). Other ingredients are shrimp paste, dried shrimp and shallots
Kaeng Matsaman: curry with meat, potatoes, peanuts and coconut milk (a mild curry from the Muslim Southern part of Thailand)
Kaeng Pa: jungle curry is a water-based curry eaten in Northen Thailand. This curry is hot and full of flavor from fingerroot, kaffir lime zest, lemon grass, garlic, shallots, shrimp paste and chilies
Kaeng Phed: spicy curry with meat and chilies
Kaeng Som: hot and sour curry with fish (can be fired), morning glory vegetables and juice-based tamarind
Phanaeng: Thai southern style dry curry with meat, kaffir lime leaves and coconut milk

Soup
Spicy and non-spicy soup dishes are always served as one of a communal dinner's dishes. Most non-spicy soup dishes can be made with a variety of ingredients.


Kaeng Chued Ma Ra: stuffed bitter melon in soup broth. Stuffed bitter melon can use ground pork or chicken
Kaeng Chued Taeng Gwa: stuffed cucumber in soup broth. Stuffed cucumber can be ground pork or chicken
Kaeng Chued Tao Hu: beancurd, soy bean sprouts in soup broth. Some may add ground pork
Kaeng Chued Wun Sen: clear noodle, ground meat, vegetables and broth
Kaeng Tam Leung: chicken or pork rib broth with gourd leaves (bai tam leung)
Tom Kha Gai: hot and sour coconut milk soup with chicken, lemon grass, mushrooms, kaffir lime leaves and chilies
Tom Kha Pla Duk: hot and sour coconut milk soup with catfish, lemon grass, mushrooms, kaffir lime leaves and chilies
Tom Kha Ta Le: hot and sour coconut milk soup with assorted seafood, lemon grass, mushrooms, kaffir lime leaves and chilies
Tom Som: sweet and sour soup with fish, shrimp paste, tamarind juice, onion and coriander
Tom Yum Gai: hot and sour soup with chicken, mushrooms, cilantro, lemongrass, kaffir lime leaves, nam prik pao paste and chilies
Tom Yum Goong: hot and sour soup with shrimp, mushrooms, cilantro, lemongrass, kaffir lime leaves, nam prik pao paste and chilies
Tom Yum Moo Pa: hot and sour soup with wild boar, mushrooms, cilantro, lemongrass, nam prik pao paste and chilies
Tom Yum Pla Duk: hot and sour soup with catfish, mushrooms, cilantro, lemongrass, nam prik pao paste and chilies
Tom YUm Ta Ke: hot and sour soup with assorted seafood, mushrooms, cilantro, lemongrass, kaffir lime leaves, nam prik pao paste and chilies

Rice Dishes
With rice as Thais' staple, there are many of quick rice dishes. Some may eat as their main meal, but some may eat as snack.


Jok: rice porridge with ground pork, fresh ginger and green onion (some may add egg)
Khao Krug Ka Pi: shrimp paste rice with slices of thin omlet, fired shallots, shreaded raw mango, sweet shredded pork and dried shrimp
Khao Mok Gai: Thai-style chicken biriyani served with rice cooked with yellow spices
Khao Moo Daeng: Chinese-style red pork with rice, boiled eggs and cucumber
Khao Mun Gai: steamed chicken with rice cooked in chicken stock and garlic
Khao Nah Ped: roasted duck served on rice
Khao Ob Subparod: fried rice with shrimp, pineapple, onions and cashew nuts, baked in a pineapple
Khao Pad Moo-Goong: fried rice with pork, shrimp, eggs, onion and cilantro
Khao Pad Poo: fried rice with crab meat, eggs, tomatoes, onion and cilantro
Khao Pad Subparod: fried rice with shrimp, pineapple, onions and cashew nuts
Khao Tom: rice soup with a selection of meat and vegetable side dishes;
Khao Tom Goong: rice soup with shrimp
Khao Tom Moo: rice soup with pork
Khao Tom Pla: rice soup with fish

Desserts
Dessert is known as Khanom or Khong wan in Thai. Most Thai desserts are based on fruits and natural flavor.


Bua Loy Benjarong: taro, pumpkin, and mung dal bean balls in coconut milk
Kaeng Buat: potatoes, taro and pumpkin in coconut milk
Khanom Kluay: blended banana mixed with flours dessert with shredded coconut on top
Khao Niaw Dum Puek-Ma Prao: taro, coconut meat and black sticky rice with coconut topping
Khao Niaw Gaew: boiled pandanus sticky rice balls
Khao Niaw Ma Muang: mango served with sticky rice and coconut milk
Khao Tom Mud: steamed black beans, sticky rice and banana in banana leaf
Khanom Chan: nine-layered sweet. Main ingredients are flours and natural colors
Khanom Khrok: warm coconut pudding
Khanom Moh Kaeng: Thai-style egg custard
Khanom Tago: sago-based dessert with coconut cream on top
Khanom Thien: mung beans in banana leaf
Khanom Thua Fu: jasmine sponge cakes
Khanom Thua Paep: mung bean stuffing coated with shredded coconut meat
Khanom Thuay: coconut cakes
Kluay Buat Chee: banana in coconut milk
Kluay Tod: deep-fried banana fritters
Luk Choob: made from mung dal beans, this dessert is a collection of miniature replicas of fruits and vegetables
Mun Tom Khing: potatoes in ginger syrup
Nam Kang Sai: assorted fruits, beans or sticky rice with shaved ice on top
Paeng Jee: grilled coconut cakes
Sang Kha Ya Fak Thong: coconut custard in a hollowed pumpkin
Sakoo Khao Pod: tapioca and corn with coconut topping
Sakoo Tao Dum: tapioca and black beans in coconut milk
Tao Suan Med Bua: mung dal beans and lotus seeds with coconut topping
Thong Yip (Pinched Gold), Thong Yod (Drop of Gold) and Foi Thong (Golden Threads): these three are well-known egg-yolk
desserts in Thailand. The color of these three desserts is a yellow-like golden color from the egg yolk

There are lots more dishes than I can mention here. Part II will talk more about seafood dishes, stir-fried dishes and fruits. Already a fairly extensive list, the above selections help give one a sense of both the wide variety of dishes and the groups of dishes that relate to or build off of each other. Certainly many different combinations of dishes await! Combinations can be further harmonized based on increasing familiarity with dishes that also allows one to better tailor selections for a given occasion. As noted earlier, recipes and general descriptions for a dish can vary significantly. As a result, there are many possibilities for taste and other elements of many of the dishes listed here.

Holiday Candy Recipes - The Ultimate Recipes to Make Candy

Do you like candy as much as I do? Well, did you know that you can prepare delicious candy from the comfort of your home? Pecan pralines, raspberry divinity, chocolate turtles and coconut bon bons are some simple yet delicious candy recipes you can prepare at home.

Below are the recipes so you can try them out and you will see what i mean:

1. Pecan Pralines

Ingredients:

- 1 cup of brown sugar
- 1 cup of sugar
- 1 cup of milk
- 1 tablespoon of maple syrup
- 1 tablespoon of butter
- 1/8 teaspoon of salt
- 1 cup of chopped pecans

Directions:

- Combine sugars and milk.
- Cook over low heat, stirring constantly until sugars are dissolved and mixture boils.
- Cook until thermometer registers 224.
- Add butter and pecans.
- Cook until a small amount of mixture forms a soft ball when dropped in cold water.
- Cool quickly to lukewarm.
- Stir in maple syrup and heat until thick.
- Drop on a buttered surface and flatten out into patties.

2. Raspberry Divinity

Ingredients:

- 3 cups of sugar
- 1 - 3 oz. Package of raspberry gelatin
- 1/2 cup of flaked coconut
- 2 egg whites, stiffly beaten
- 3/4 cup of light corn syrup
- 1 cup of chopped pecans
- 3/4 cu of water

Directions:

- Combine sugar, corn syrup, and water.
- Bring to a boil, stirring constantly.
- Reduce heat and cook to hard ball stage.
- Combine beaten egg whites and gelatin - beat until mixture forms stiff peaks.
- Pour hot syrup slowly into egg whites, beating until candy loses gloss and holds shape.
- Fold in coconut and nuts (optional).
- Pour into greased 9 inch square pan.
- Top with rows of chopped nuts and coconut.

3. Chocolate Turtles

Ingredients:

For The Turtles

- 2 squares of chocolate
- 1/2 cup of margarine
- 2 eggs
- 3/4 cup of sugar
- 1 cup of flour
- 1 teaspoon of vanilla

For The Icing:

- 1/2 square of chocolate
- 1/2 cup of brown sugar
- 1/4 cup of water
- 2 1/2 tablespoons of butter
- Powdered sugar

Directions:

- Melt 2 squares of chocolate and 1/2 cup of margarine.
- Beat 2 eggs. Add sugar. Fold chocolate mixture into egg mixture.
- Fold in 1 cup flour and 1 teaspoon vanilla.
- Drop by teaspoon on hot waffle iron (low).
- Bake 50 seconds.
- Cool and frost.
- ICING: Boil chocolate, brown sugar, water, and butter 3 minutes.
- Take off heat.
- Add powdered sugar until thick.
- Put on turtles.
- Sprinkle with ground nuts.

4. Coconut Bon Bons

Ingredients:

- 3/4 cup of instant potatoes (2 servings cooked, but not seasoned)
- 4 cups of flaked coconut
- 1 - 16 oz. package of powdered sugar
- 1 teaspoon of almond extract

Directions:

- Stir together the instant potatoes, coconut, powdered sugar, and the almond extract, mixing thoroughly.
- Refrigerate the mixture for 1 to 2 hours.
- Melt a 12 ounce bag of semi-sweet chocolate chips and 1/3 of a bar of paraffin was in a double boiler.
- Shape the coconut mixture into small balls and dip in the melted chocolate.
- Lay on waxed paper until cool.

Homemade Coconut Ice Cream For the Win!

I prefer to make my own ice cream because I then have total control over the ingredients. The following came from a friend. It is a combination of recipes from the Ben & Jerry's book, and some coconut milk recipes online. It's delicious, and it keeps the sugar and artificials out while keeping the flavor and the texture you know you love!

2 eggs
2 cans organic coconut milk (a little over 3 cups)
2/3 cup cocoa powder
6 Tbs. agave nectar **
1 Tbs. vanilla extract

Beat the eggs until fluffy. Add a little coconut milk and the cocoa powder and beat until the cocoa is completely blended in. Add the rest of the ingredients and beat until thoroughly blended.

I try to remember to put the bowl in the freezer for at least 8 hours and make sure your freezer is at 0 degrees (max) before I put it into the ice cream maker. Very tasty.

**I used to use stevia. You'd have to fiddle around to taste because all stevias are different. I used 'kal' brand and put in about 3 (heaping) tiny scoops (which comes in the container).

TIP: When making ice cream with eggs, heat them with the coconut milk until it coats the back of a spoon and you can draw a line through it. Then add the cocoa and/or whatever else (like raw almond butter) and stevia. Then let it cool in the freezer for 1/2 hour or so, then transfer it to the ice cream maker.

The possibilities to use as ingredients are endless, especially in summer. Fresh strawberries, peaches, blueberries, blackberries, all are packed with antioxidants and nutrients, and they go with the coconut flavor of the ice cream so well.

Homemade Chocolate Candy Recipes - No More Candy Shop

Some people may think that candy is only sold at the candy shop. But that's not the case because you can prepare even tastier candy recipes at home.

Here are 4 candy recipes you can prepare at home:

1. Almond Chocolate Coconut Cookies

Ingredients:

- 1 cup butter
- 1 1/2 cups white sugar
- 1 1/2 cups brown sugar
- 4 eggs
- 4 teaspoons vanilla extract
- 4 1/2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 5 cups semisweet chocolate chips
- 2 cups flaked coconut
- 2 cups chopped almonds

Directions:

- Preheat the oven to 375 degrees F (190 degrees C).
- Grease cookie sheets.
- In a large bowl, cream together the butter, white sugar and brown sugar until smooth.
- Beat in the eggs, one at a time, then stir in the vanilla.
- Combine the flour, baking soda and salt, stir into the creamed mixture until well blended.
- Finally, stir in the chocolate chips, coconut and almonds.
- Drop by rounded spoonfuls onto the prepared cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven.
- Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

2. Almond Coconut Chocolate Cookie Balls

Ingredients:

- 2 (1 ounce) squares unsweetened chocolate
- 1 (14 ounce) can sweetened condensed milk
- 3 cups flaked coconut
- 1 teaspoon vanilla extract
- 1 pinch salt
- 1 cup whole almonds

Directions:

- Preheat oven to 350 degrees F (175 degrees C).
- Line a baking sheet with parchment paper.
- In the top half a double boiler melt the chocolate and condensed milk, stirring frequently.
- Pour the melted chocolate mixture over the coconut.
- Stir in the vanilla and salt. Mix well until the coconut is completely coated.
- Drop dough by teaspoonfuls onto the prepared baking sheet.
- Press one whole almond into the top of each cookie.
- Bake at 350 degrees F (175 degrees C) for 10 to 12 minutes.
- Check at 8 minutes as the bottoms tend to burn easily.
- Remove from oven and cool.

3. Babe Ruth Bars

Ingredients:

- 1 cup peanut butter
- 1 cup white corn syrup
- 1/2 cup packed brown sugar
- 1/2 cup white sugar
- 6 cups cornflakes cereal
- 1 cup semisweet chocolate chips
- 2/3 cup peanuts

Directions:

- In a large saucepan over medium heat, combine the peanut butter, corn syrup, brown sugar and white sugar.
- Cook stirring occasionally until smooth.
- Remove from heat and quickly mix in the cornflakes, chocolate chips and peanuts until evenly coated.
- Press the entire mixture gently into a buttered 9x13 inch baking dish.
- Allow to cool completely before cutting into bars.

4. Candy Bar Bars

Ingredients:

- 2/3 cup butter
- 1 cup packed brown sugar
- 1 tablespoon vanilla extract
- 1/2 cup light corn syrup
- 4 cups quick cooking oats
- 1 cup semisweet chocolate chips
- 2/3 cup crunchy peanut butter

Directions:
- Preheat oven to 350 degrees F.
- Lightly grease a 9" x 13" pan.
- In a large mixing bowl, cream the butter and sugar together.
- Mix in the vanilla, corn syrup and oats.
- Pat this dough into the greased pan. Bake for 15-16 minutes (don't over bake).
- Meanwhile, over low heat melt together the chocolate chips and peanut butter.

Allow the cookie base to cool slightly, and then spread the chocolate peanut butter mixture on top.

Cool completely and cut into bars.

Easy Cinnamon Carrot Cake With Buttercream Frosting and a Chocolate Earthquake Cake

This carrot cake recipe is a little different and easier than some. You start with a yellow boxed mix, add water, butter, and egg along with carrots and cinnamon. Instead of the usual cream cheese frosting we see on carrot cake, this cake is iced with a butter cream frosting. Don't like carrot cake? We still a cake for you. Try the Earthquake Cake which is made with a Swiss Chocolate Cake Mix.

CINNAMON CARROT CAKE

9 oz pkg yellow cake mix
1/2 cup water
1/4 cup butter, melted
1 egg
1 cup shredded carrots
1 tsp ground cinnamon

Preheat oven to 350 degrees.

In a large mixing bowl, combine the boxed mix, water, butter, and egg. Mix as directed on cake mix package. Stir in the carrots and cinnamon. Pour batter into prepared pan and bake at 350 degrees for 25 to 30 minutes or until a wooden toothpick inserted in the center comes out clean. Cool completely before frosting.

FROSTING:

2 cups powdered sugar
1/4 cup butter, softened to room temperature
3 tbsps milk
1/2 tsp vanilla

Combine all ingredients in a large mixing bowl. Using an electric mixer, beat at medium speed scraping down the sides of the bowl frequently, until creamy. Spread over cooled cake.

Note: For variations you may add 1/4 cup raisins and/or 1/4 cup chopped walnuts to the cake batter.

EARTHQUAKE CAKE

1 box Swiss Chocolate Cake Mix (can be hard to find, usually available by Duncan Hines)
1 cup chopped pecans
1 cup coconut
1 lb powdered sugar
8-oz cream cheese
1 stick butter
1 tbsp vanilla

Preheat oven to 350 degrees.

Mix cake according to the package directions. Set aside.

Spray bottom only of a 9 x 13-inch baking pan with nonstick cooking spray. Spread pecans in bottom of the pan. Sprinkle the coconut over the pecans. Pour the cake mix mixture over the pecans and coconut. Mix powdered sugar, cream cheese, softened butter, and vanilla. Spoon powdered sugar mixture over the top of the cake mix, one spoonful at a time. Bake at 350 degrees for 45 to 60 minutes.

Caution: Cake must be completely cooled before cutting. If cut while warm, cake will be runny.

I have realized that I have a very fond place in my heart for most curry dishes. It seems that they are more popular then ever these days, and I love to make and eat them often. I have tried several that are on the www but have found that I have not enjoyed them very well so I have created my own. I hope that you will find this to be a simple recipe and that you will enjoy it as much as I do.

Ingredients you will need: Chicken about 3-4 breast, Onions 1 small sliced like fajita cut, Red Bell Pepper 1/2 julienned sliced, 1/2 Can of Straw Mushrooms, 1/4 Cup of Matchstick Carrots, 1/4 Cup of Snow Peas. **For the Sauce: 1 Can of Coconut Milk, 2 Tablespoons of Sugar, 1 28 oz Can of Tomatoes Diced, 1 Yellow Can of Curry Paste, 3 Tablespoons of canola oil, 1 Toe of Fresh Garlic and Ginger, 1/4 Cup of Fresh Cilantro, Pinch of Salt and 2-3 Tablespoons of Corn Starch in about the same amount of water to make a slurry.

First you will get your sauce ready so you can let it simmer down after all of the ingredients are added. You will take a large sauce pan and add your oil and garlic and ginger over a low heat until you start to smell the aroma of them. Then add your Coconut milk and your tomatoes and curry and stir. Then add your sugar, salt and heat it up to about a simmer. When the sauce is warm add your slurry to thicken and then add your fresh cilantro and turn the heat on low and just let it hang out until your other ingredients are ready.

Chicken- You will want to cook your chicken. You can sauté it or bake it with a little salt pepper and paprika if you prefer. If you are going to sauté it you will need a little bit of oil in the pan preferably canola oil. It is a mono-saturated fat and it has a higher smoke point than olive. Get it to a golden brown in the pan and let hang out in the pan covered or in the oven on its lowest setting until done. To bake it you will add salt pepper and paprika and bake on 350 for about 15 minutes or until done. You do not want to overcook it because it will be dry.

Vegetables- You will want to get all of them washed and cut and ready to add the the sauce. I would sauté them in the pan that the chicken was cooked in to get the flavor from the chicken. When the vegetables are warm you will add them to the chicken. First i would add the onions and get them translucent and then I would add the carrots and bell peppers. I would add the mushrooms and the snow peas at the very last and give them a toss or two, and call them done.

**Rice/Starch- If you want to make some rice for this dish and you want to keep it more on the healthy side I recommend a brown rice if you prefer. The dish is fine without the rice but if you are trying to make sure you get your grains in for the day I say go for it.

When ready to serve if you are using rice and it to a serving dish and pour the sauce around the rice. Add your vegetables an top and the chicken to top of the veggies and serve. If you are not using rice add the vegetables to the sauce and stir. You will them add all of the sauce with veggies to a serving dish and the chicken will go on top of the sauce. Enjoy!

Grilled Pineapple Cake Delight - The New Way to Serve Dessert

Nothing would beat a nice dessert after a good meal - ice cream, cakes, pies and other sweets is an awesome choice. Everyone enjoys a tasty dessert, unless you are diabetic. Ending the meal with a desert is a tradition practiced by almost everyone. The word desert came from the old French language desservir; originally practiced by the western culture but due to foreign influences, no longer it is exclusive to western meals. We are truly blessed with the wide variety of sweet delights, which is present in the food business. If you haven't noticed, people have been paying attention to sweets served to them after their meals. Grilled desserts are starting to get the attention of the public; most are intrigued with the taste and nutrition of such a food. A recipe called grilled pineapple cake delight is starting to be noticed by many.

We will need
One can sliced pineapple, at least 20 ounces
One teaspoon butter
Half teaspoon brown sugar
One-fourth teaspoon vanilla extract
One-eight teaspoon ground cinnamon
One-eight teaspoon ground nutmeg
Six sliced pound cake
Vanilla ice cream
Caramel ice cream topping

How to prepare
Drain the pineapple; set aside six ring slices and one-third cup juice (the remaining pineapple juice should be saved for other usage). Mix the brown sugar, butter, vanilla, cinnamon, and reserved pineapple juice in a bowl. Grill the pineapple rings and cake for at least 1 to 2 minutes. You must not forget to apply the mixture occasionally. Make sure that the color of the pineapple is golden brown. When it is done, put the cooked pineapple in a serving plate, together with a caramel topping and one scoop of ice cream. This is good for 5 to 6 servings.

More and more people are starting to be aware of the food they eat; this is a nutritional move on their part. Desserts are the reason why we stay longer on the table after a meal. Seldom would we see a person skip a good dessert. Though it is not required in our meal, we all would demand for it; nutrition experts are advising us to consume minimal sweets. They know we cannot control ourselves, once a tasty treat is being served on the table.

Cake Recipes - Traditional Cake Recipes in Poland Part 1

Welcome again. As you know I'm writing culinary articles and the task of these texts is to give you some interesting and helpful information about cooking and about different kinds of meal. I'm really doing my best to provide you the best information about work in the kitchen. In this article I'm going to provide you some information about traditional Polish cake recipes (and cakes of course). Traditional Polish cakes are very big, colorful and very tasty.

Let's start with the poppy-seed cake. This kind of cake is god for every occasion in Poland. It's very cheap, tasty and easy to prepare. Traditional poppy-seed cake is made of poppy-seed, flour, butter, yeast, sugar, eggs, salt, powdered sugar. There are many poppy-seed cake recipes. You can add apple to them or other additions such as meringue, nuts etc. I really recommend this very tasty cake for every occasion. It's perfect for Easter, Christmas, birthday or you can prepare it without any occasion. I'm sure that your family will be very happy about that.

The next kind of traditional Polish cake is dame which is made of sand cake (it was described in my previous article, I was also describing dame in my previous articles). It's very cheap and tasty kind of cake. You can eat it and you don't have to worry about being overweight because of eating it. Typical ingredients for it are: sand cake, sugar and eventually some additions, for example chocolate custard. Of course there are many recipes for this cake, so everybody can find something that fits his/her requirements.

The last kind of a cake that I'm going to describe is ginger cake. There are many ginger cake recipes in Poland. It can be prepared in a form of cake and in form of biscuits. The best ingredients for typical Polish ginger cake are honey, sugar, butter, flour, eggs, soda, milk, ginger cake relish, salt and some fat to form. These ingredients are very cheap, so the cake is very cheap too. I want to add that it's very tasty. It's perfect for Christmas. In many households it's one of traditional 12 meals on Christmas Eve table. I recommend this cake. There are lots of ginger cake recipes so this kind of cake is very varied.

Is Red Velvet Cake Really Made From Beets?

The answer is that it all depends upon who is making it. Where did this cake come from? There is one story, which I leave you to decide whether authentic or not, that it was made at the request of a guest at the Waldorf Astoria for a guest. They made the cake and charged her $100 for the privilege of receiving the recipe. In revenge she passed it out to anyone who would take it.

The Waldorf version is said to use beets for color. Nowadays it is made all over the place, but especially in the South Some of the attraction is at least the slightly unusual ingredients. One theory is that the red food coloring was added when Dutch cocoa began to be used as this has an alkali added so is less likely to produce the traditional mahogany red.

A quick search reveals there are a number of variations on the theme Usually these include a cream cheese or cooked frosted icing, but for a less rich version a simple drizzle of glace icing works as does just a sprinkle of icing sugar. Try doing this through a doily which, if you remove it extremely carefully, will leave a beautiful pattern.

Ingredients for Red Velvet Cake

1/2 cup of low fat spread

1 1/2 cups of granulated or Castor sugar

2 eggs

2 tablespoons of cocoa powder ( drinking chocolate is a little too sweet).

2 teaspoons of red food coloring

1 teaspoon of salt

2 1/2 cups of cake flour or self raising flour

1 teaspoon of vanilla extract

1 cup of buttermilk or plain yogurt

1 teaspoon of baking soda

1 tablespoon of vinegar

Method.

Cream the sugar and low fat spread. Separate the eggs and beat the yolks. Incorporate them into the creamed mixture. Sieve the cocoa and mix with the food coloring before adding to this mixture together with the vanilla. Add the salt to the flour and mix this in alternately with the buttermilk or yogurt. Beat the egg whites to a fluff and fold this in to make a light mixture. Mix baking soda with vinegar and mix this in stirring well. Bake in 2 9 inch pans for 30 minutes at 350F, 190C, Gas 5. If you use smaller pans you will need 3 and a slightly shorter cooking time. Allow to cool and then fill and glaze as you like. Strawberry or apricot preserves are good.

A fluffy topping can be made by combining ingredients in a double boiler and beating as it cooks. You will need :-

The whites of 2 eggs,1 1/2 cups of icing sugar, pinch of salt, 1/3 cup water, 2 teaspoons light corn syrup. Cook this mixture for about 7 minutes, stirring all the time and then mix in 1 teaspoon vanilla extract. Let it cool before using. The result has been described by one writer as 'the Dolly Parton' of cakes. Well it is certainly a star - it even featured in the film 'Steel Magnolias' although there it was armadillo shape and had
grey icing. It probably tasted just as indulgent nevertheless.

Variations

Other recipes use the eggs whole rather than separated. Almost all versions include cocoa which contains anthocyanin, a natural coloring which appears redder in the presence of acid, hence the vinegar. One recipe unbelievably uses half a bottle of coloring - which I think is a bit over the top - but then it is that sort of cake.

Note: I was doing fine with my diet until the monthly visitor arrived the Big"P" I inflated like a blowfish and I just gobbled up the ice cream cake and drank parrot bay coconut rum and coca cola. I was about to give up when I said I'm going to make water work for me not against me hence I started the lemonade diet and included "diruretic" dinners at night. Yes. The bloating is horrible but it is natures way of taking care of things and it's only a few days. This I believe is the number one reason woman give up on diets. The Lemonade Diet but to me I call it the Lemon "Aid" diet (because it aids in something) consisists of 1. 2Tbsp of lemon or lime juice 2. 2 Tbsp genuine maple syrup 3. 1/10 Tsp cayenne pepper (red pepper) or to taste. In my case I put massive amounts. :) It got me drinking extra water lol 4. Water. medium hot (spring or purified)Note: You can drink it cold. I did. Instructions are on page 17 of the Master Cleanser pamphlet by Stanley Burroughs. It is important to use fresh lemons or limes The darker grades of maple syrup are preferred. I used grade A but the next time I'll look for grade B as I will be reducing food intake and working to going 100% Lemonade ...

Birthday Cake History

The birthday cake has been an integral part of the birthday tradition in Western cultures. The cake is served to a person on his or her birthday, and is often decorated with small novelty candles, with the person's name and/or a message of congratulations inscribed with icing. The phrase "Happy Birthday" did not appear on birthday cakes until the song Happy Birthday to You was popularized in the early 1900s.

Tradition holds that the person with the birthday may make a wish, which will come true if all the candles can be blown out in one breath. US patent 6319530 relates to a "method of photocopying an image onto an edible web for decorating iced baked goods." This invention enables one to ink jet print a food-grade color photograph on the cake surface.

History of Birthday Cake can be traced back to the ancient Greeks who made round or moon shaped honey cakes or bread and took it to the temple of Artemis -the Goddess of Moon. Some scholars, however, believe that the tradition of Birthday cake started in Germany in middle Ages. This special birthday cake later reemerged in Germany as a Kinderfest or the birthday celebrations of a young child. Germans also baked another special kind of a cake called Geburtstagorten as it was baked in layers. This was sweeter that the coarse and bread like cake that were usually made at that time.

In earlier times, Birthday cakes were mostly round in shape. Scholars associate religious beliefs and technical compulsions for the same. Greeks offered round shape cake to the Goddess of Moon - Artemis as it signified moon. They even placed candles on the cake to make the cake glow like the moon.

Technical reason given for the roundness of the cake is that most cakes we know off advanced from the bread. In ancient times breads and cakes were made by hand. Typically, these were fashioned into round balls and baked on hearthstones or in low, shallow pans. Hence, these naturally relaxed into round shapes. With the progress of times baking pans of various shapes were developed and today we see cakes in imaginative shapes and sizes.

In medieval times people of England used to place symbolic objects like coins, rings and thimbles in the batter of the cake. It was believed that those who found coin in the cake would be wealthy while the unlucky finder of the thimble would never marry. If the cake fell while baking it was considered to be a bad omen and signified bad luck for the person in the coming year.
Thus in the midst of many superstitions and beliefs, merged the tradition of Birthday cakes which is so popular all over the world today.

Quick Christmas Cookie Recipes - Easy Fruitcake Bar Cookies

Instead of a big, heavy fruitcake, serve these delicious cookies.

3/4 cup butter, softened

1 3/4 cups packed brown sugar

3 eggs

1 tablespoon vanilla extract

1 1/2 cups all purpose flour

3 cups walnuts, coarsely chopped

1 1/2 cups candied pineapple, coarsely chopped

1 3/4 cups red and green cherries, halved

2 cups pitted dates, halved

Directions

Preheat oven to 325 degrees.

Prepare a 15x10x1-inch baking pan with nonstick cooking spray. Lightly sprinkle pan with flour.

In a bowl, cream together the butter and brown sugar. Add in the eggs, one at a time, beating well after each one. Stir in the vanilla. Add the flour and walnuts; mix well.

Spread mixture evenly into the prepared baking pan. Sprinkle walnuts, pineapple, cherries and dates on top; press lightly into dough.

Bake for 45 to 50 minutes, or until lightly browned. Let cool completely before cutting into squares.

Makes 96 bar cookies.

Bake for 10 to 12 minutes or until browned. Remove from pan immediately and let cool completely.

Makes 24 cookies.

Directions

Prepare baking sheets with nonstick cooking spray.

In a bowl, cream together the shortening and sugar; beat in the egg.

In another bowl, combine the flour, baking powder and salt; stir into the creamed mixture. Fold in peppermint candy.

Drop by teaspoonfuls onto the prepared baking sheets. Bake for 10 to 12 minutes or until cookie edges begin to brown. Remove from pan and let cool completely.

Makes 36 cookies.

Sweet Potato Recipes - Easy Potato Recipes

Sweet potatoes contain virtually no fat or sodium. Sweet potatoes are harvested in August through October and are available in supermarkets all year round. Many stores feature them at Thanksgiving and Christmas. There are two varieties of sweet potatoes; the pale yellow with a dry flesh and the dark orange with a moist flesh. The dark orange variety is plumper in shape and somewhat sweeter than the yellow variety.

I love to make this sweet potato recipe during the Christmas holiday period. This sweet potato recipe is easy, quick and uses only a few ingredients.

Sweet Potato Pecan Mix

Makes 8 Servings

1 12-inch skillet

8 medium sweet potatoes or yams (about 3 pounds)

1/2 cup packed brown sugar

1/4 cup (1/2 stick) margarine

1/4 cup water

3/4 teaspoon salt

1/3 chopped pecans

1. Heat the oven to 350*F. Scrub the sweet potatoes thoroughly with a vegetable brush, but do not peel. Pierce sweet potatoes on all sides with a fork to allow steam to escape while sweet potatoes bake. Place sweet potatoes directly on oven rack.

2. Bake sweet potatoes about 1 hour or until tender when pierced with a fork. Be sure to use a pot holder because the sweet potatoes will be very hot to the touch.

3. When sweet potatoes are cool enough to handle, gently peel off the skins using a paring knife. Cut sweet potatoes into 1/2-inch slices.

4. Heat the brown sugar, margarine, water and salt in the skillet over medium heat about 2 minutes, stirring occasionally, until mixture is smooth and bubbly. Add the sweet potatoes and pecans. Gently stir until potatoes are coated with sauce.

Substitute orange juice for the water in order to make orange sweet potato pecan mix. Add 1 tablespoon grated orange peel to the brown sugar in step 4. Remove the pecans.

Raw Cheesecake #12

Raw Cheesecake Makes: 24 slivers Equipment: Food Processor Crust: 2 cups raw macadamia nuts 1/2 cup dates, pitted 1/4 cup dried coconut For the cheese: 3 cups chopped cashews, soaked for at least 1 hour 3/4 cup lemon juice (or lime juice) 3/4 cup honey I use raw 3/4 cup coconut oil 1 teaspoon vanilla 1/2 teaspoon himalayan salt For sauce: 2 cups frozen berries 1/2 cup dates DIRECTIONS To make the crust, process the macadamia nuts and dates in the food processor. Sprinkle dried coconut onto the bottom of an 8 or 9 inch springform pan. Press crust onto the coconut. This will prevent it from sticking. See other video. To make the cheese, blend the cashews, lemon, honey, gently warmed coconut oil (do not use microwave), vanilla, himalayan salt (if using), and 1/2 cup water. Blend until smooth and adjust to taste. Pour the mixture onto the crust. Remove air bubbles by tapping the pan on a table. Place in the freezer until firm. Remove the whole cake from the pan while frozen and place on a serving platter. Defrost in the refrigerator.

Striped Bass Recipes

The fish should be chilled on ice and laid out flat until cleaned. Once the fish is home, it can be rinsed thoroughly and filleted. Several cleaning methods exist and each angler learns their favorite style.

The fish can be scaled and the skin left on, filleted and then skinned or the skin can be cut around the perimeter of the fish and pulled off with pliers. The skin-on version is nice when baking or grilling smaller fish. Skinning the fish before filleting has some advantages, the most important being speed. Filleting the fish and then cutting the skin off removes the most dark meat and leaves the highest quality portion, although some fish is lost in the process.

Cooks have a variety of favorites for cooking rockfish. Small pieces of any size rockfish is delicious fried. Other choices include grilling, broiling, fish cakes and more. The following are a few Chesapeake Bay favorites:

Dijon Rockfish

Ingredients:

1 lb. striped bass fillets

2oz. white wine

2oz. mayonnaise

2oz. dijon mustard

Instructions:

This one is real simple but it's also really good.

Mix equal parts of white wine, mayonnaise and dijon mustard and wisk until smooth.

Pour over fish fillets in baking dish and bake at 400 degrees for 20 minutes or until done.

Lemon Butter Rockfish

Ingredients:

1 lb. striped bass fillets

1/2 fresh lemon

1 tbsp. butter

1 tsp. olive oil

1/2 tsp. Old Bay crab seasoning or equivalent

Instructions:

Preheat oven to 400 degrees.

Drain fillets and lay in a casserole dish coated with olive oil.

Squeeze lemon juice over fillets, coat with butter and sprinkle with seasoning.

Bake for 10 minutes or until fish is white on the outside and still slightly pink in the center.

My fondant Creations

Two lions made of fondant inspired by Aine2's puppy. The dora is fondant until the waist and the dress is a fondant cover cake. I used airbrush for two tone hair and the cakes swirls to look like ruffled dress. The carribean cake is iced with buttercream and the coconut tree and hammock is fondant. I also airbrushed ths cake, 2nd time of use. the sand is brown sugar. I tried to write in airbrush but it was harder than i thought. Hope you LIKE any question please feel free to ask!!!! Jamaican Rum Punch Recipe

Rum is considered to be the world's oldest distilled spirit and is made throughout the Caribbean. On Jamaica, Appleton Rum Estate has been distilling rum from sugar can for over 200 years and is the island's most popular drink. With a very sweet flavor rum is often used to make refreshing fruit punches and coconut cocktails. The drinks below are found anywhere in Jamaica and are a cooling treat to complement any meal and the island's year round summer temperatures.

Jamaican Rum Punch

Ingredients:

* 1 bottle Jamaican gold rum

* 1 bottle dark caruba rum

* 1 bottle Jamaican overproof rum

* ½ gallon orange juice

* ½ gallon pineapple juice

* 1 cup lime juice

* splash of grenadine for color

* splash of angostura bitters

Directions:

Shake all ingredients together in large airtight container or stir vigorously in large punch bowl. Serve over ice and garnish with orange slice, cherry and mint leaves, or pineapple slice and cinnamon stick.

Ginger is a favorite flavor in Jamaica and is considered a healthy ingredient in this cooling drink. Ginger beer can be boiled and stored in glass jars or bottles for a long time or simple steeped in warm water and used within days.
Ingredients:

* 9oz. Fresh ginger root

* 4 qt. Water

* sugar to taste

* 1 tsp. ground cloves

* 1 tsp. lime juice

Directions:

Grate the ginger into a saucepan and add water, cloves and juice. Stir well and bring to a boil. Boil for half an hour and sweeten to taste. Strain and bottle after cooling. Serve as hot tea or cold over ice.

Coconut Shrimp Recipes

Are you looking for coconut shrimp recipes or delicious shrimp recipes?
Here are three shrimp recipes using coconut milk:

Shrimps with Coconut Milk

1 medium onion, finely chopped

1 tablespoon oil

1 tablespoon butter

2 cloves garlic, finely minced

1 pound tomatoes, peeled, seeded and blended in blender or food processor

1 pound shrimps, peeled and deveined

1 cup unsweetened coconut milk

1/2 tablespoon crushed chili peppers

Salt to taste

In a saucepan, heat oil and butter; sauté garlic and onion for 3 minutes. Add tomatoes,
season with salt and cook under low heat for 15 minutes. Add shrimps and chili peppers. Cook
until shrimps are done (around 10 minutes) and the sauce is thickened. Add the coconut milk
and cook for 2 minutes more. Serve with rice.

Shrimp Skewer with Coconut Dip

24 large cooked shrimps, peeled and deveined

4 tablespoons light soy sauce

Juice from one orange

3 tablespoons dry Vermouth

1 tablespoon lemon juice

1 small pineapple

1 bunch scallions

24 cherry tomatoes

Freshly ground black pepper

Oil to fry

For the Dip:

1/2 cup unsweetened coconut milk

1 cup whipping cream

Salt, pepper, cayenne pepper

1-2 teaspoon lemon juice

In a bowl, mix the soy sauce, orange and lemon juice, and Vermouth. Add the shrimps, mix well,
cover and let marinate for 30 minutes. Peel and core pineapple. Cut into bite-size pieces.
Wash and clean scallions. cut scallions crosswise into 2-inch pieces. Wash and dry cherry
tomatoes. Take the shrimp out of the marinade. Thread the shrimps, pineapple, scallions, and
tomatoes alternately on skewers. Season with salt and pepper. In a frying pan, heat oil and
fry for 4-6 minutes per side or until until the shrimp are cooked through. Serve with coconut
dip.

Dip:
Mix the coconut milk with the whipping cream. Season with salt, pepper, cayenne pepper, and
lemon juice.

Coconut Shrimp Scampi

1 cup unsweetened coconut milk

1 pound medium shrimps, peeled and deveined

4 ounces cream cheese

2 cloves garlic, finely minced

3 1/2 ounces grated Parmesan cheese

1/2 cup whipping cream

1/2 cup cornstarch

2 1/2 cup milk

1 tablespoon butter

Olive oil

Salt to taste

In a saucepan, heat olive oil; sauté shrimps and garlic. In another saucepan, mix the milk,
coconut milk, butter and cornstarch. Cook, stirring constantly over medium heat until thickened.
Add whipping cream and Parmesan cheese. Stir in cream cheese and shrimps. Season with salt.
Transfer to baking dish and bake for 10 minutes. Serve immediately with rice.
